150 gr. Un filetto di rombo | Turbot fillet

Una Fetta di Pancarrè senza bordi One Slice of white bread without crust

Una Zucchina romanesca con fiore per guarnire One Roman zucchini and zucchini flower to garnish

Una|One Pomodoro verdone | Green tomato

½ Scalogno | Shallot

50gr. Olio evo | Olive oil

10gr. Burro | Butter

100ml Martini Riesling | Martini Riesling

30gr. Panna liquida | Single cream

Un Lime e 2 rondelle di lime per guarnire One Lime and 2 slices to garnish

Quattro Foglie di salvia e 2 foglie per guarnire Four Leaves of sage and 2 leaves to garnish

30gr. Pistacchi verdi non tostati | Non toasted pistachio nuts

50gr. Zenzero fresco | Fresh ginger

5gr. Zucchero di canna | Cane sugar

Sale q.b. | Pinch of salt Pepe q.b. | Pinch of pepper

PREPAR A ZIONE | P R E PA R AT I O N

PESTO DI ZENZERO | GINGER PESTOMettere nel mixer il lime completamente privato della buccia, i pistacchi, la salvia, lo zenzero sbucciato e tagliato a dadini un pizzico di sale, lo zucchero e due cucchiai di olio e far girare per pochi secondi fino a formare un pesto omogeneo.

Put lime in mixer (peeled), pistachio nuts, sage, ginger (peeled and cut into small pieces), pinch of salt, sugar and two tablespoons of oil and mix for a few seconds to form a pesto like texture.

ROMBO | TURBOTPrendere la fetta di Pancarrè e stenderla a mattarello con l’ausilio di un po’ di farina, spalmare un cucchiaio di pesto sulla fetta di pane . Battere leggermente il filetto di rombo tra due fogli di carta da forno e porre il pesce sul pane appena spalmato del pesto. Condire con un pizzico di sale e arrotolare il tutto a formare un rotolino ben stretto. Far riposare in frigo coperto con della pellicola.

Take the slice of white bread and roll out using a small portion of flour, spread one tablespoon of the pesto on the bread. Lightly bang the fillet of tubot between two pieces of oven proof paper and place on top of the bread. Dress with a pinch of salt and roll into a tight roll. Let it cool down in the fridge covered with cling foil.

MAIONESE DI VERDONI | GREEN TOMATO MAYONNAISE Sbollentare il pomodoro verdone in acqua bollente per dieci secondi e privarlo della buccia, tagliarlo a spicchi e privarlo dei semi. Mettere il pomodoro a pezzetti in un bicchiere da minipimer e frullare con il restante olio d’oliva a filo e un pizzico di sale.

Parboil tomatoes in boiling water for ten seconds, remove skin, cut into slices and remove seeds. Place the tomatoes in a minipimer and whisk with the remaining olive oil added a little at a time with a pinch of salt.

SALSA MARTINI | MARTINI SAUCEFar sciogliere il burro in un pentolino con lo scalogno tritato finemente e un pizzico di pepe. Non appena imbiondisce lo scalogno sfumare col Martini e far ridurre della metà. Aggiungere la panna e aggiustare di sale. Far cuocere ancora pochi minuti fino ad ottenere una salsa liscia e cremosa.

Melt the butter in a small pan with the shallot finally chopped and a pinch of pepper. As soon as the shallot is golden, sprinkle with Martini and reduce to half on a low heat. Add the single cream and taste for salt. Cook another few minutes until the sauce is smooth and creamy.

CARPACCIO DI ZUCCHINE | zUCCHINI CARPACCIOLavare la zucchina tolta dal fiore e affettarla per la lunghezza dello spessore di un millimetro con una mandolina. Sbianchire in acqua bollente per pochi secondi le fette ottenute e freddare subito in acqua e ghiaccio. Formare due carpacci incrociando le fette di zucchina su due fogli di carta da forno.

Wash the zucchini and slice one millimetre pieces long ways. Blanch the zucchini slices in boiling water for a few seconds and then cool immediately in ice water. Form two carpaccios crossing the slices of zucchini on two pieces of oven proof paper.

COMPOSIZIONE DEL PIATTO | COMPOSITION OF THE DISHCuocere il rotolo di rombo al forno spennellato di olio e un pizzico di sale per 8 minuti a 180°C. Adagiare su due piatti i carpacci di zucchine. Guarnire con un fiocco di maionese di verdone. Quando il pesce è cotto pararlo ai due lati e tagliarlo in diagonale per formare due pezzi uguali da adagiare sui carpacci. Finire i piatti con la salsa e guarnire con il fiore di zucca, la rondella di lime e una foglia di salvia fresca.

Cook the roll of turbot glazed with olive oil and a pinch of salt in the oven for 8 minutes at 180°. Place the zucchini carpaccio on two separate plates. Garnish with a little green tomato mayonnaise. When the fish is cooked cut along both sides diagonally to form two pieces and compose on top of the carpaccio. Complete the dish with the sauce and garnish with the zucchini flower, the lime slices and a leaf of fresh sage.

Quali compiti e doveri ha un padrone per rendere felice il suo cane e vivere serenamente con lui?Il lavoro inizia prima di prendere un cane. È una scelta importante ed è una grande responsabilità che ci accompagnerà per molti anni, quindi pensiamo bene al nostro stile di vita, agli orari, a come potremmo condividere il tempo con il nostro amico...In linea generale però tutti i cani hanno bisogno del giusto percorso veterinario, di essere vaccinati, microchippati, sverminati regolarmente, coperti con buoni anti parassitari, e inoltre devono seguire una dieta equilibrata. Ogni cane deve poter uscire almeno tre volte al giorno, per fare i suoi bisogni ma soprattutto per esplorare il mondo intorno a lui. Ricordiamoci inoltre che il cane è un animale sociale e per questo ha grande necessità di incontrare e comunicare con i suoi simili.Il gioco è un momento importante delle giornate dei nostri amici: bastano poche decine di minuti al giorno, divise in più volte, per mantenere alto lo spirito di qualunque cane.

Com’è vissuta dal cane la separazione dal padrone dovuta a viaggi o vacanze, e cosa possiamo fare per renderla il meno traumatica possibile?Anche qui tutto cambia in base all’abitudine. Se sin da piccolo il cane ha saputo tollerare bene separazioni sempre più lunghe, possiamo presumere che non ci siano problemi. Questo varia di cane in cane e diventa un problema in presenza di ansia da separazione. Qualunque alternativa si scelga, pensione, pensione casalinga, la casa di amici o parenti, è importante che ci sia un percorso d’inserimento graduale, in cui il cane possa capire di venir portato e ripreso, abbia tempo di conoscere il posto, di tranquillizzarsi, e di conoscere bene chi avrà a che fare con lui.

Quali sono le regole da osservare quando si viaggia con il proprio cane?Valutare sempre il clima e le leggi sui cani del Paese in cui si viaggia, in quanto molti Paesi richiedono vaccinazioni specifiche ed è necessario eseguirle nei tempi preposti.Nei viaggi in macchina fare molte soste per far sgranchire le gambe al nostro amico, fornendogli sempre un po’ d’acqua per rifocillarsi (mai troppa: un cane stressato potrebbe bere troppo e avere poi la nausea). It is an important choice and a big responsibility that lasts many years therefore it is important to consider one’s lifestyle, one’s schedule and the time one will spend with their pet. However generally speaking a dog needs the right veterinary care, to be properly vaccinated, micro-chipped, dewormed regularly and treated with good anti-parasites as well as following a healthy diet. A dog should be allowed out at least three times a day to be able to do his business but above all to explore his surroundings.We have to remember that a dog is a social animal and therefore needs to meet and communicate with other dogs.Playing is also an significant part of the day for dogs. Simply spending a few minutes a day with him, will ensure a happy dog.

How does the dog live the separation from his owner due to travels or holidays and what can we do to make it less traumatic?Also in this case things can vary depending on how a dog is used to been treated. If since he is a pup, a dog has been able to handle separations from his master that can extend longer with time, then we can assume that the dog will have no problems. This of course varies from dog to dog and can become a problem in cases of anxiety due to separation. Whichever choice one makes be it making use of a kennel service, friends or family, the most important thing is that there is a gradual phase for the dog to adapt and fit in to his new surroundings and to get to know who will be looking after him.

What are the rules we have to observe when we travel with our dog?It is important to evaluate the weather and the regulations for dogs for the Country one will be visiting as many Countries require specific vaccinations and one must get them done in the times required. If travelling by car one must make many pit stops in order to allow our friend to stretch his legs and to give him water in order to keep him well hydrated (but not too much: a stressed dog could drink a lot and that could cause nausea). Whichever means of transport one uses it is advised, although not compulsory, the use of a dog carrier.While travelling we must remember to always bring the documents of one’s dog, their food in order to avoid drastic changes in diet that can create digestive disturbances, a good leash of at least a metre and a half, a collar and/or dog harness and a muzzle. This is required in many cities, even if we may think that we have the nicest dog in the world!
