icavare dal Panettone delle fette di 2/3 cm di spessore, adagiarle tra due
fogli di carta forno ed appiattirle con il mattarello.
Con un tagliapasta dal diametro leggermente più grande degli stampi di
tartellette, ricavarne dei dischi, disporli negli stampini, facendoveli aderire ed
infornare per 6 minuti circa.
Tagliare la cipolla a fettine e farla andare in padella con un pizzico di sale, una
noce di burro e lo zucchero, bagnando con un po’ di acqua. Quando comincia
a diventare tenera, versare il Pinot Grigio, attendere che evapori e spegnere.
Mescolare con la frusta le uova, la panna ed il formaggio, aggiustando di sale.
Sbucciare la mela e ricavarne dei dadini, tagliare il salmone a striscioline:
con questo mix e le cipolle caramellate, riempire le quiches e ricoprire con il
miscuglio di uova.
Cuocere in forno a 180 °C per circa 20 minuti.

ut two or three thick slices from the Panettone, lay between two pieces of
oven parchment and crush with a rolling pin.
Use a pastry cutter of a diameter slightly larger than the mini tart mould, cut
discs, arrange in the moulds, press well and bake for about six minutes.
Slice the onion and sauté in a frying pan with a pinch of salt, a lump of butter
and the sugar, adding a small amount of water. When the onion softens, pour
in the Pinot Grigio, wait for it to evaporate and turn off the heat.
Beat the eggs, cream and cheese, seasoning with salt as required.
Peel the apple and cube; slice the salmon into thin strips; fill the quiches with
this mix and the caramelized onions, then cover with the egg mixture.
Bake at 180° C for about 20 minutes.

Blätter Backpapier legen und mit einem Nudelholz platt walzen.
Mit einem Teigausschneider, dessen Durchmesser etwas größer als der der
Tartellette – Förmchen ist, runde Scheiben ausstechen, diese in die Förmchen
legen, darin andrücken und circa 6 Minuten in den Ofen geben.
Die Zwiebel in Scheiben schneiden und mit einer Prise Salz, etwas Butter und
dem Zucker in einer Pfanne erhitzen und dabei mit etwas Wasser begießen.
Sobald die Zwiebel weich wird, den Pinot Grigio hinzufügen, abwarten, bis er
verdampft ist und den Herd ausstellen.
Mit dem Schneebesen die Eier, die Sahne und den Käse verrühren, mit Salz
abschmecken.
Den Apfel schälen und in Würfel schneiden; den Lachs in kleine Streifen
schneiden: mit diesem Mix und den karamellisierten Zwiebeln die Quiches
befüllen und mit dem Eigemisch bedecken.
Im Ofen bei 180°C für circa 20 Minuten backen.

• scorza di un arancio (non trattato) grattugiata fine*
*se la scorza d’arancio risultasse troppo umida, cospargerla su un foglio di carta assorbente da cucina e metterla per qualche minuto nel forno tiepido ma spento
PeR IL buDInO DI PARMIGIAnO• 50 g di Parmigiano Reggiano (oltre
20 mesi) • 110 ml di latte
• 2-3 grosse foglie di salvia • 10 g di farina di riso • 1 uovo • ½ albume
PeR LO ZAbAIOne • 50 g di spinaci freschi • 15-20 g di pera matura • 60 ml di acqua (di cottura degli
spinaci) • 20 ml di latte scremato • 2-3 pizzichi di sale, pepe • 15 g di tuorlo
al pezzo di Panettone tagliare due fette dello spessore di 1 cm e mezzo
(possibilmente con un coltello affilato per non schiacciarle) e tostarle in
un tostapane o sotto il grill del forno per qualche minuto. Toglierle dal forno
e lasciarle raffreddare.
Portare il latte a leggera ebollizione, aggiungere la salvia e il Parmigiano,
mescolare e lasciare sobbollire per 1-2 minuti. Togliere dal fuoco, trasferire la
crema in un contenitore e lasciare intiepidire.
Pulire le foglie di spinaci, rimuovendo i gambi più grossi e spessi; lavarli con
cura e scottarli in acqua bollente per 1 minuto. Quindi scolarli (tenendo da
parte l’acqua di cottura) e immergerli in acqua ghiacciata per 1 minuto per
mantenere vivo il colore. Strizzarli un po’ dall’acqua e frullarli col minipimer
insieme alla pera, aggiungendo a poco a poco 40 ml di acqua di cottura tenuta
da parte e il latte. Frullare fino ad ottenere una salsa liscia e infine aggiungere
sale e una macinata di pepe.

Versare la salsa di spinaci in un pentolino antiaderente, aggiungere il tuorlo
e mescolare. Porre il pentolino sul fornello più piccolo e cuocere mescolando
continuamente con un cucchiaio di legno, fino ad ottenere una salsa più spessa
(la salsa non deve essere fluida né troppo densa). Raffreddandosi la salsa si
addensa ulteriormente.
Trasferire la crema in un contenitore e coprirla con due o tre fiocchetti di
burro (oppure coprire con della pellicola da cucina a contatto con la superficie
della crema).
Eliminare la salvia dalla crema di Parmigiano e versare quest’ultima nel
boccale del minipimer. Aggiungere la farina di riso, il latte, l’uovo e l’albume.
Frullare fino ad ottenere una crema senza grumi.
Imburrare 4 stampini da crème caramel e riempirli per 3/4 con il composto.
Cuocere a vapore per circa 18 minuti. Sono pronti quando risultano sodi al
tatto. In caso fossero ancora troppo morbidi, risistemarli nella vaporiera. A
cottura ultimata, tenere in caldo e lasciarli riposare per qualche minuto.
Tagliare a cubetti il Panettone tostato ormai raffreddato.
Intiepidire velocemente (½ minuto + riposo di 1 minuto) al microonde lo
zabaione, poi mescolarlo per omogeneizzarlo. Velare un piatto piano con lo
zabaione e versarne un cucchiaino abbondante nel punto in cui si andrà a
disporre il budino. Cospargere con scorza di arancio e sistemare il budino di
Parmigiano. Servire infine con crostini di Panettone.

• finely-grated orange peel (untreated)*
*if the orange peel is too damp, spread over a piece of kitchen paper and place in warm, unlit oven for a few minutes
FOR The PARMIGIAnO ReGGIAnO PuDDInG• 50 g Parmigiano Reggiano (aged at
least 20 months) • 110 ml of milk
• 2-3 large sage leaves • 10 g rice flour • 1 egg • half an egg white
FOR The ZAbAGLIOne • 50 g fresh spinach • 15-20 g ripe pear • 60 ml water (spinach cooking
water) • 20 ml skimmed milk • 2-3 pinches of salt, pepper • 15 g egg yolk
rom the piece of Panettone cut two slices of 1.5 cm in height (best use a
sharp knife so the slices do not crumble), toast in a toaster or under the
grill for a few minutes. When toasted, leave to cool. Bring the milk to boiling
point, adding the sage and the Parmigiano, mix and leave to simmer for one or
two minutes. Remove from heat and pour the cream into a container to cool.
Clean the spinach leaves, removing the larger, thicker leaves; wash carefully
and blanche in boiling water for one minute. Then drain (keeping aside the
cooking water) and immerse in icy water for one minute to protect the colour.
Squeeze out some of the water and blend in a mixer with the pear, slowly
drizzling in the milk and 40 ml of the cooking water that was set aside. Blend
until the sauce is smooth; season with salt and freshly-ground pepper. Pour
the spinach sauce into a non-stick saucepan, add the yolk and stir. Place the
saucepan on the smallest hob ring and cook while stirring continuously with
a wooden spoon, until the sauce thickens (the sauce should not be too runny
or too thick). As it cools, the sauce will thicken further. Pour the cream into

a container and cover with two or three curls of butter (or cover with kitchen
film touching the surface of cream). Remove the sage from the Parmigiano
cream; pour it into the blender. Add the rice flour, milk, egg and egg white.
Blend to obtain a smooth cream. Butter four crème caramel moulds and fill to
three-quarters with the mixture. Steam for about 18 minutes. The puddings
are ready when they are firm to the touch. If they are still too soft, replace in
the steamer. When cooked, keep warm and leave to rest for a few minutes.
Cube the toasted Panettone, which will now have cooled. Warm the zabaglione
quickly in the microwave (30 seconds + 60 seconds to rest) then stir to smooth.
Spread a glaze of zabaglione on a flat plate and add a large teaspoonful
where the pudding will be arranged. Sprinkle with orange peel and add the
Parmigiano pudding. Now serve with the Panettone croutons.

FüR Den PARMeSAn PuDDInG• 50 g Parmigiano Reggiano (über 20
monate gereift) • 110 ml milch
• 2-3 große salbeiblätter • 10 g reismehl• 1 ei• ½ eiweiß
FüR Den ZAbAIOne • 50 g frischen spinat • 15 – 20 g reife birne• 60 ml wasser (kochwasser des
spinats)• 20 ml entrahmte milch• 2 – 3 prisen salz, pfeffer• 15 g eigelb
on dem Panettone – Stück zwei Scheiben mit einer Dicke von circa 1 ½
Zentimetern schneiden (möglichst mit einem sehr scharfen Messer, um sie
nicht zu zerdrücken) und diese in einem Toaster oder unter dem Grill des Ofens
einige Minuten rösten. Aus dem Ofen nehmen und abkühlen lassen.
Die Milch leicht zum Kochen bringen, den Salbei und den Parmesan hinzufügen,
vermischen und 1 -2 Minuten köcheln lassen. Vom Feuer nehmen, die Creme in
einen Behälter geben und lauwarm werden lassen. Die Spinatblätter putzen
und dabei die größten und dicksten Strünke entfernen, sorgfältig waschen
und 1 Minute lang in kochendem Wasser blanchieren. Anschließend abtropfen
(das Kochwasser beiseite stellen) und 1 Minute in eiskaltes Wasser tauchen,
damit die Farbe erhalten bleibt. Etwas auswringen und dann mit dem
Stabmixer gemeinsam mit der Birne mixen und dabei nach und nach 40 ml
des Kochwassers und die Milch hinzugießen. Solange mixen, bis eine glatte
Sauce entsteht, dann mit Salz und gemahlenem Pfeffer würzen. Die Spinatsauce
in ein beschichtetes Pfännchen geben, das Eigelb hinzufügen und vermischen.
Das Pfännchen auf die kleinste Feuerstelle geben und bei ständigem Umrühren
mit einem Holzlöffel solange köcheln, bis die Sauce fester wird (sie soll weder
zu flüssig noch zu fest sein). Beim Abkühlen verfestigt sich die Sauce noch
mehr. Die Creme in einen Behälter geben und mit zwei oder drei Butterflocken
bedecken (oder mit Küchenfolie so abdecken, dass diese die Oberfläche der
Creme berührt). Den Salbei aus der Parmesan – Creme entfernen und diese in
das Gefäß des Stabmixers geben. Das Reismehl, die Milch, das Eigelb und das
Eiweiß hinzufügen. Alles solange mixen, bis eine glatte Creme ohne Stückchen
entsteht. 4 Crème Caramel – Formen einbuttern und zu ¾ mit der Masse füllen.
Circa 18 Minuten dampfgaren. Sie sind fertig, sobald sie sich fest anfühlen.
Sollten sie noch zu weich sein, wieder in den Dampfgarer geben.
Den inzwischen abgekühlten Panettone in Würfel schneiden.
Den Zabaione kurz in der Mikrowelle erwärmen (½ Minute + 1 Minute
ruhenlassen) und ihn dann gleichmäßig verrühren. Einen flachen Teller mit
dem Zabaione beträufeln und einen großzügigen Löffel an die Stelle geben,
auf die der Pudding gelegt werden soll. Mit Orangenschale bestreuen und den
Pudding platzieren. Schließlich mit den gerösteten Panettonewürfeln servieren.

• sale• pepe• un cucchiaio di fave di cacao • 4 foglie di salvia• una noce di burro
reparare le tagliatelle: tritare il Panettone nel mixer, unire la farina e
le uova e procedere come per una normale pasta. Lasciare riposare per
circa 30 minuti, poi stendere la sfoglia e tagliare la pasta.
Cuocere in acqua bollente salata per circa 2 minuti.
Per il condimento: preparate la fonduta lasciando sciogliere in un pentolino a
fuoco basso il formaggio tagliato a pezzetti e la noce di burro con il latte e le
foglie di salvia. Salare e pepare.
Condire la pasta e cospargerla con la grue di cacao.

and proceed as for normal pasta. Leave to rest for 30 minutes than roll
out the dough and cut the tagliatelle.
Cook in boiling water for about two minutes.
For the dressing: prepare the fondue allowing the chopped cheese, the butter
and the sage leaves to melt in a small saucepan on a low heat. Season with salt
and pepper. Dress the pasta and garnish with cocoa sprinkle.

und die Eier hinzugeben und wie eine normale Pasta zubereiten. Circa
30 Minuten ruhen lassen, dann den Teig ausrollen und die Pasta zuschneiden.
In kochendem Salzwasser circa 2 Minuten garen.
Für die Käsesauce: in einer kleinen Pfanne den in Stückchen geschnittenen
Käse mit der Butter, der Milch und den Salbeiblättern schmelzen lassen.
Salzen und pfeffern.
Die Pasta damit anrichten und mit Kakaostückchen bestreuen.

• 500 g di totani• 500 g di patate• una scatola di pomodori pelati
• ½ bicchiere di Pinot Grigio Impronta del Fondatore Alto Adige D.O.C. Santa Margherita
• peperoncino (facoltativo)• aglio, olio e sale q.b.
ulire i totani e tagliarli ad anelli, sbucciare le patate e tagliarle a cubetti.
In una pentola rosolare lo spicchio d’aglio e il peperoncino con un filo
d’olio, unire i totani ben sgocciolati e lasciar soffriggere per qualche minuto
dopodiché sfumare con il vino. Quando il vino sarà evaporato, unire le patate,
i pelati schiacciati con una forchetta, salare e lasciare cuocere a fiamma bassa
fino a quando le patate ben cotte iniziano a disfarsi. Intanto procedere con i
crostini. Tagliare a cubetti il Panettone, spruzzarlo leggermente con il Pinot
Grigio, aggiungere dei fiocchi di sale, possibilmente Maldon e infornare in
forno caldissimo fino a farli diventare croccanti.
Servire la zuppa accompagnata da crostini e un buon bicchiere di Pinot
Grigio Impronta del Fondatore Alto Adige D.O.C. Santa Margherita.

lean the squid and cut into rings; peel and cube the potatoes.
Brown the garlic and chilli pepper in a saucepan with a drizzle of oil, add
the well-drained squid and leave to fry gently for a few moments, then add
the wine and simmer until evaporated. Now add the peeled potatoes, mashed
with a fork, add salt and leave to cook on a low heat until the potatoes are
well cooked and start to crumble. In the meantime, proceed with the croutons.
Cube the Panettone, drizzle lightly with the Pinot Grigio, add salt – preferably
Maldon – flakes and bake in a very hot oven until crisp.
Serve the stew with the croutons and a large glass of Pinot Grigio.

und in Würfel schneiden.
In einer Pfanne die Knoblauchzehe und die Chilischoten mit etwas Olivenöl
andünsten, den gut abgetropften Tintenfisch hinzufügen und einige Minuten
anbraten lassen, dann mit dem Wein ablöschen. Sobald der Wein verdunstet
ist, die Kartoffeln und die mit einer Gabel zerquetschten Tomaten hinzufügen,
salzen und bei niedriger Temperatur solange garen, bis die Kartoffeln gut
durchgekocht sind und anfangen, zu zerfallen. In der Zwischenzeit die
Röstwürfel vorbereiten. Den Panettone in Würfel schneiden, ihn leicht mit
Pinot Grigio bespritzen, mit Salzflocken (möglichst Maldon – Salz) würzen
und in einen sehr heißen Ofen geben, bis sie knusprig werden.
Den Eintopf gemeinsam mit den Röstwürfeln und einem guten Glas Pinot
Grigio servieren.

emimontare i tuorli con lo zucchero ed unirvi 60 ml di Pinot Grigio ap-
pena scaldato, a fiamma bassissima, in un padellino.
Per pastorizzare i tuorli, dopo aver amalgamato il composto semimontato al
vino, portare il tutto alla temperatura di 85 °C (se non avete un termometro
da cucina potete accertarvi della raggiunta temperatura quando il composto
inizierà a divenire “spumoso” ed a velare il cucchiaio con il quale, nel frattem-
po, lo avrete continuamente mescolato).
Aggiungere la colla di pesce, ammorbidita in acqua fredda e quindi strizzata,
ed unire il rimanente Pinot Grigio (a temperatura ambiente); mescolare bene
il tutto e lasciar raffreddare il composto fino a portarlo alla temperatura di
30/35 °C.
Nel frattempo montare la panna (ma non troppo compatta: deve rimanere
“lucida”).
Lavare e tagliare le pesche a pezzettoni, quindi frullarle ricavandone una pu-
rea.
Infine unire i tre composti (tuorli con zucchero e Pinot, panna lucida, purea
bavarese alle pesche

di pesche, ma di quest’ultima soltanto due terzi), mescolando delicatamente
dal basso verso l’alto, fino ad ottenere un unico composto spumoso e vellutato.
Ricavare con un coppapasta 10 dischi di Panettone al Pinot Grigio sui quali
versare il composto alle pesche.
A questo punto potete scegliere voi, per gusto o praticità, se sistemare i dischi
di Panettone sul fondo di un bicchierino o di una coppetta, versandovi poi
sopra la purea di pesche, oppure se disporli all’interno del coppapasta di cui
sopra (certo dovreste averne più d’uno) e procedere allo stesso modo con la
purea.
Riporre in frigo fino all’avvenuto consolidamento della bavarese.
Successivamente scaldare il rimanente terzo della purea di pesca con 30 ml
di Pinot Grigio e lo zucchero, quindi sciogliervi i 2 grammi di colla di pesce
ammorbidita in acqua fredda.
Una volta raffreddatasi versare due cucchiai di purea di pesche sopra ogni
bavarese e rimettere in frigo per lasciarla solidificare.
Per guarnire le bavaresi ricavare da una pesca dei sottili spicchi ed una picco-
la dadolata che farete “caramellare” a fiamma bassa con lo zucchero ed il vino
bianco (i rimanenti 20 ml), mescolando continuamente finché il fondo non
avrà iniziato a rapprendersi.
Lasciar raffreddare il tutto (se doveste colarlo caldo sulla bavarese questa
inizierebbe a sciogliersi) e poi disporre su di ogni bavarese un paio di sottili
spicchi di pesca caramellata ed un cucchiaino di dadolata.
Guarnire con cimette di menta fresca.

eat the yolks with the sugar until they are semi stiff and add 60ml of
Pinot Grigio barely heated in a small pan over a very gentle heat. After
adding the wine to the semi-stiff mixture, pasteurize the yolks by bringing
everything to a temperature of 85° C (if no kitchen thermometer is available,
check when the mixture begins to become frothy and veils the spoon used to
stir it continuously, as this means the temperature has been reached). Add
the gelatine, previously softened in cold water and then squeezed, and add
the remaining Pinot Grigio (at ambient temperature); mix well and allow the
mixture to cool to a temperature of 30-35° C. Meanwhile, whip the cream (but
not too stiff as it must remain “shiny”). Wash and cut the peaches into large
chunks, then blend them into a puree. Finally, add the three mixtures (egg
yolks with sugar and cream, Pinot, peach puree, but only two-thirds of the
latter), stirring gently from the bottom upwards until the mixture is frothy and
velvety. Use a pastry cutter to make ten Panettone discs and pour the peach
puree over them. At this point, according to taste or for convenience, decide

whether to arrange the Panettone discs on the bottom of a glass or bowl and
cover with the peach puree, or place them inside the pastry cutter, but this
will require several cutters, and then add the puree. Place in a refrigerator
until the bavarois solidifies. Heat the remaining third of puree with 30ml of
Pinot Grigio and sugar, then dissolve the 2g of gelatine in cold water. When
cool, pour two tablespoons of peach puree over each bavarois and place in the
refrigerator to set.
For the topping, cut thin peach wedges and cubes; caramelize over a low heat
with the sugar and remaining 20ml of white wine, stirring constantly until
the juice starts to stiffen. Allow to cool (if the mixture is poured hot over the
bavarois it will melt) and then finish each bavarois with a couple of thin slices
and a teaspoon of cubed caramelized peach. Top with tufts of fresh mint.

as Eigelb mit dem Zucker halbfest schlagen und 60 ml Pinot Grigio hinzufügen,
der in einem Pfännchen bei sehr niedriger Temperatur leicht erwärmt wurde.
Das mit dem Wein verrührte Eigemisch zum Pasteurisieren des Eigelbs auf 85°
erhitzen (sollte kein Küchenthermometer vorhanden sein, erkennt man die
gewünschte Temperatur auch daran, dass das Gemisch anfängt, zu „schäumen“
und den Löffel zu verdecken, mit dem alles kontinuierlich umgerührt werden
muss). Erst die in kaltem Wasser aufgeweichte und anschließend ausgedrückte
Gelatine und dann den restlichen Pinot Grigio (mit Raumtemperatur) hinzugeben;
alles gut verrühren und auf 30/35 °C abkühlen lassen. In der Zwischenzeit die
Sahne schlagen (aber nicht zu fest: sie muss „glänzend“ bleiben). Die Pfirsiche
waschen und in Stücke schneiden, dann im Mixer zu einem Püree verarbeiten.
Die drei Komponenten (Eigelb mit Zucker und Wein, Sahne, Pfirsichpüree,
aber von letzterem nur zwei Drittel) zusammengeben und vorsichtig von unten
nach oben solange vermischen, bis ein cremiger und samtiger Schaum erreicht
ist. Mit einem Teigausschneider aus dem Panettone mit Pinot Grigio 10 runde
Scheiben ausstechen, auf die die Pfirsichcreme verteilt werden soll. Nun kann
je nach Geschmack oder Geschicklichkeit entschieden werden, ob man die
Panettonescheiben in den Boden eines Glases oder Schälchens legt und darauf
das Pfirsichpüree gibt, oder ob man sie in den Teigausstecher bzw. das Förmchen
legt und dann gleichermaßen mit dem Püree befüllt (wofür man natürlich
mehrere Förmchen benötigt). In den Kühlschrank stellen, bis die Bayrische
Creme fest wird. Anschließend das restliche Drittel des Pfirsichpürees mit 30 ml
Pinot Grigio und dem Zucker erwärmen und darin die 2 Gramm Gelatine, die
vorher in kaltem Wasser aufgeweicht wurden, auflösen. Nach dem Abkühlen 2
Löffel Pfirsichpüree auf jede Bayrische Creme geben und im Kühlschrank fest
werden lassen. Zum Dekorieren der Creme aus einem Pfirsich kleine Spalten und
Würfelchen schneiden und anschließend bei niedriger Temperatur mit Zucker
und dem restlichen Weißwein (die übrigen 20 ml) “karamellisieren”, indem
solange umgerührt wird, bis der Bodensatz anfängt, fest zu werden. Abkühlen
lassen und erst dann (die Wärme würde sonst die Creme zum Schmelzen bringen)
auf jede Bayrische Creme ein paar feine Spalten und einen Löffel Würfelchen des
karamellisierten Pfirsichs geben. Mit Blättchen frischer Minze dekorieren.

• 4-5 fette non troppo sottili di Panettone Loison al Pinot Grigio
• 4 melanzane grandi• pomodori lunghi maturi• 1 cipolla rossa• qualche cucchiaio di aceto di vino

agliare la cipolla sottile e metterla in ammollo in una ciotola con dell’ac-
qua e qualche cucchiaio di aceto di vino rosso (mi raccomando, aceto
vero) per qualche ora. Tagliare i pomodori a cubetti senza eliminare i semi e
sminuzzare a mano il basilico in piccoli pezzi. Scolare e risciacquare la cipolla,
unirla ai pomodori e al basilico ed infine unire i pezzi di Panettone Loison al
Pinot Grigio. Condire con olio e sale, mescolare bene il tutto e lasciar riposare.
Tagliare le melanzane per lungo e con molta attenzione svuotarle della polpa
interna, cospargere l’interno con del sale grosso e lasciarle scolare del liquido
di vegetazione giusto il tempo di preparare tutto il resto. In una padella an-
tiaderente mettere qualche cucchiaio di olio e l’aglio sbucciato e schiacciato e
rosolarvi velocemente la polpa delle melanzane tagliata a cubetti.
Scolarla su carta assorbente e unirli all’insalata di Panettone.
Risciacquare i gusci di melanzane e riempirli con l’insalata di Panettone, si-
stemare in superficie qualche pezzetto di pomodoro, qualche foglia di basilico
e un filo di olio.
Sistemarli uno vicino all’altro in una teglia coperta da carta forno e infornare
a 180 °C per 40-45 minuti.
Servire caldi ed accompagnare con un buon bicchiere di Pinot Grigio Impron-
ta del Fondatore Alto Adige D.O.C. Santa Margherita.

lice the onion thinly and leave to soak for a few hours in a bowl of water
and a few tablespoons of red wine vinegar (genuine vinegar, of course).
Cube the tomatoes without removing the seeds and chop the basil into small
pieces. Drain and rinse the onion, add to the tomatoes and basil, then add the
pieces of Panettone Loison al Pinot Grigio. Season with oil and salt, mix well
and leave to rest. Slice the aubergines lengthwise and carefully remove inner
pulp; sprinkle the interior with salt and leave the vegetable liquid to drain
while preparing the other ingredients. Pour several tablespoons of olive oil
into a frying pan, add peeled, crushed garlic, and sauté the cubed aubergines.
Drain on kitchen paper and add to the Panettone salad. Rinse the aubergine
shells, fill with Panettone salad, garnish with tomato pieces and basil, and
drizzle with oil. Place close together on a baking sheet covered with oven
parchment and bake at 180° C for 40-45 minutes.
Serve hot with a glass of Pinot Grigio Impronta del Fondatore Alto Adige
D.O.C. Santa Margherita.
ie Zwiebel fein schneiden und in einer Schüssel mit Wasser und einigen
Löffeln Rotweinessig (unbedingt echter Essig!) mehrere Stunden
einweichen Die Tomaten in Würfel schneiden, ohne die Kerne zu entfernen, und
den Basilikum mit der Hand in kleine Stücke zupfen. Die Zwiebel abgießen
und abspülen, zu den Tomaten und dem Basilikum geben und schließlich
die Stücke des Panettone Loison mit Pinot Grigio hinzufügen. Mit Öl und
Salz abschmecken, gut vermischen und ziehen lassen. Die Auberginen längs
halbieren und vorsichtig das Fruchtfleisch ausheben, das Innere der Hälften
mit grobem Salz bestreuen und die Fruchtflüssigkeit für die Zeit ablaufen
lassen, die für die restliche Zubereitung benötigt wird.
Etwas Öl in eine Pfanne mit Antihaftbeschichtung geben und darin kurz
den geschälten und zerpressten Knoblauch sowie das in Würfel geschnittene
Fruchtfleisch der Auberginen anbraten. Erst auf saugfähiges Küchenpapier
ablegen und dann zu dem Panettone – Salat geben. Die Auberginenschalen
abspülen, mit dem Panettone – Salat befüllen und auf der Oberfläche mit
einigen Tomatenstückchen, Basilikumblättchen und etwas Olivenöl anrichten.
Nebeneinander auf ein mit Backpapier ausgelegtes Blech stellen und bei
180°C für 40 – 45 Minuten in den Ofen geben.
Warm servieren und mit einem guten Glas Pinot Grigio Impronta del
Fondatore Alto Adige D.O.C. Santa Margherita begleiten.

(spessore uniforme, come se fosse un pancarré, scartando la prima fetta con
tutta la superficie di crosta) da scaldare in padella antiaderente per qualche
istante sino a quando si tosta, ottenendo un magnifico color ambrato. Tagliare
con un piccolo coppapasta a misura ottenendo 24 cialdine da appoggiare alla
bufala.
Per condire: scaglie di sale affumicato, pepe nero, olio extra vergine d’oliva
fruttato e aceto balsamico tradizionale di Modena extra vecchio.

ie Mozzarellakugeln in Viertel schneiden und auf den Tellern so anrichten
(6 Viertel pro Portion), dass jeweils abwechselnd eine Feigenscheibe mit
unterschiedlicher Farbe anlehnt. Den Panettone Loison in gleichförmige
Scheiben schneiden (einheitliche Dicke, wie bei einem Kastenbrot, deshalb
Scheiben mit Kruste an der gesamten Oberfläche entfernen) und in einer Pfanne
mit Antihaftbeschichtung solange rösten, bis er eine schöne Bersteinfarbe
erhält. Mit einem kleinen Teigausstecher 24 passende Scheibchen ausstechen,
die an die Mozzarellastücke gelegt werden
Zum Abschmecken: Flocken von geräuchertem Salz, schwarzer Pfeffer,
fruchtiges Natives Olivenöl Extra und Traditioneller Balsamessig „Extra
Vecchio“ aus Modena.

• 2 fette di Panettone Loison al Pinot Grigio
• 50 g di burro salato ammorbidito• 300 g di tonno fresco• 300 g di pesce spada fresco• 1 piccolo scalogno
• 1 limone• 6 cucchiai di olio evo• sale• pepe rosa• un pizzico di peperoncino in polvere
ostare le fette di Panettone nel forno ventilato portato a 150 °C, far raf-
freddare il Panettone e tritarlo a coltello per ottenere delle grosse briciole.
Mettere da parte 1/3 di briciole, unire al resto il burro ammorbidito e un
pizzico di peperoncino (facoltativo) e lavorarlo con le dita per ottenere il com-
posto omogeneo.
Tritare finemente lo scalogno e mescolarlo con 1 cucchiaio di succo di limone.
Tagliare a piccolissimi cubetti il tonno, metterlo in una ciotola e condire con
sale, metà dell’olio e lo scalogno; mescolare e mettere da parte.
Tagliare a piccoli cubetti anche il pesce spada, metterlo in una ciotola e con-
dire con sale, il resto dell’olio, 1-2 cucchiai di succo di limone, poca scorza di
limone grattugiata finemente e qualche granello di pepe rosa.
Prelevare ¼ del composto di Panettone e burro e, con l’aiuto di un coppapa-
sta, creare una base per la tartara direttamente sul piatto (come se fosse per
la cheesecake). Mettere sopra ¼ di tonno, schiacciare leggermente, aggiungere
un po’ di briciole messe da parte, poi aggiungere ¼ di pesce spada. Schiaccia-
re anch’esso e completare il tortino con qualche briciola di Panettone, infine
togliere il coppapasta.
Preparare gli altri tortini nello stesso modo e porre i piatti nel frigo per alme-
no 1 ora.

• 2 slices of Panettone Loison al Pinot Grigio
• 50 g softened salted butter• 300 g fresh tuna• 300 g fresh swordfish• 1 small scallion
• 1 lemon • 6 tablespoons of extra virgin olive
oil• salt• pink pepper• a pinch of chilli powder
• 2 scheiben Panettone Loison mit Pinot Grigio
• 50 g weiche salzige butter• 300 g frischer thunfisch• 300 g frischer schwertfisch• 1 kleine schalotte
• 1 zitrone• 6 löffel natives olivenöl extra• salz• rosa pfeffer• eine prise chilischoten - pulver
oast the slices of Panettone in a ventilated oven at 150° C; cool the
Panettone and chop with a knife to make large crumbs.
Set aside one third of the crumbs, blend the rest with the softened butter and a
pinch of chilli pepper (optional); mix with fingers to obtain a smooth mixture.
Chop the scallion finely and mix it with one tablespoon of lemon juice.
Cut the tuna into tiny chunks, place in a bowl and season with salt, half of the
oil and the scallion; stir and set aside.
Cut the swordfish into tiny chunks also, place in a bowl and season with salt,
the rest of the oil, one or two tablespoons of lemon juice, a hint of finely-grated
lemon zest and a few pink peppercorns.
Take one quarter of the Panettone and butter mix, then use a pastry cutter
directly on the plate to make a base for the tartare (as if it were a cheesecake).
Add one quarter of the tuna, press lightly, sprinkle some of the crumbs
previously set aside, then add one quarter of the swordfish. Press this in the
same way and complete the tart with a sprinkle of Panettone crumbs. Now
remove the pastry cutter.
Prepare all the tarts in the same way and leave in the fridge to cool for at least
one hour.
ie Panettone – Scheiben im Ofen mit Umluft bei einer Temperatur von
150°C rösten, anschließend abkühlen lassen und mit einem Messer in
große Brösel teilen.
1/3 der Brösel zur Seite stellen, den Rest zur weichen Butter geben, (wahlweise)
mit einer Prise Chilischoten – Pulver würzen und solange mit den Fingern
kneten, bis eine homogene Masse entsteht.
Die Schalotte fein hacken und mit einem Löffel Zitronensaft vermengen.
Den Thunfisch in sehr kleine Würfel schneiden, in eine Schüssel geben und
mit Salz, der Hälfte des Olivenöls und der Schalotte abschmecken, gut
durchmischen und zur Seite stellen. Auch den Schwertfisch in sehr kleine
Würfel schneiden, in eine Schüssel geben, mit Salz, dem restlichen Öl, 1 –
2 Löffel Zitronensaft, etwas fein geriebener Zitronenschale und einigen rosa
Pfefferkörnern würzen. ¼ der Masse aus Panettone und Butter entnehmen
und mit Hilfe eines Teigförmchens direkt auf dem Teller den Boden für das
Tatare bilden (wie für einen Cheesecake). Darauf ¼ des Thunfisches geben,
leicht andrücken, einige der beiseite gestellten Brösel darüber streuen, dann
¼ des Schwertfisches auftragen. Auch diesen andrücken und das Törtchen mit
einigen Panettone – Bröseln bedecken. Schließlich das Förmchen entfernen.
Die anderen Törtchen ebenso zubereiten und die Teller für mindestens
1 Stunde in den Kühlschrank stellen.

agliare delle fette di Panettone Loison al Pinot Grigio alte ½ cm e con
un coppapasta rotondo del diametro di 3,5 cm ricavare dei dischetti.
Tostare per 10 minuti in forno preriscaldato a 180°. Sfornare e tenere da
parte. Tagliare a cubetti il petto di pollo. Rosolarlo con il mazzetto di erbe
aromatiche, a fiamma bassa, in 1 cucchiaio di olio extravergine d’oliva. Salare
e pepare. Dopo qualche minuto, sfumare con il Pinot Grigio e continuare la
cottura fino a che la carne non sarà cotta (circa 20 minuti). A parte, lavare
bene gli acini d’uva, dividerli a metà e privarli dei semini. A circa 5 minuti
dalla fine della cottura del pollo, levare il mazzetto di erbe aromatiche ed
inserire nella pentola gli acini puliti in precedenza. Alla fine della cottura,
dividere gli acini dal pollo e metterli da parte. Versare il pollo con il suo
liquido di cottura nel bicchiere del minipimer ed aggiungere il burro salato
ed il vino. Frullare fino ad ottenere una crema. Versare in una terrina e far
riposare in frigo per 15 minuti. Riprendere i dischetti di Panettone Loison al
Pinot Grigio preparati in precedenza, il paté di pollo e gli acini ammorbiditi.
Su ogni dischetto, posizionare un cucchiaino di paté ed inserire al centro un
acino d’uva. Ricoprire infine con un altro disco di Panettone. Continuare fino
ad esaurimento degli ingredienti. Far riposare in frigo per 2 ore.
Servire freddi.

• 1.5 tablespoons of extra virgin olive oil
• 20 g of salted butter• 1 bunch of white grapes

• 1 und ½ löffel natives olivenöl extra • 20 g gesalzene butter• 1 weintraube mit weißen beeren
ut 0.5cm slices of Panettone Loison al Pinot Grigio and use a 3.5cm
pastry cutter to make rounds. Toast for ten minutes in a preheated oven at
180° C. Remove from the oven and set aside. Cube the chicken breast. Brown
with the herb bouquet on a low heat with one tablespoon of extra virgin
olive oil. Season with salt and pepper. After a few minutes, add the Pinot
Grigio and simmer until it reduces; continue to cook the meat until it is ready
(about 20 minutes). Wash the grapes, cut in half and remove seeds. About five
minutes before the chicken is fully cooked, remove the herb bouquet and add
the previously washed, sliced grapes. When cooked, remove the grapes from
the pan and set aside. Pour the chicken and its juices into a blender, adding
the salted butter and the wine. Blend into a cream. Pour into a terrine and
leave to chill in a fridge for 15 minutes. Recover the previously prepared
Panettone Loison al Pinot Grigio toasts, the chicken pâté and the softened
grapes. Add a teaspoon of pâté to each toast and garnish with a grape. Add
another Panettone toast. Continue until all the ingredients have been used.

vor Ende der Kochzeit des Hähnchens den Kräuterbund entfernen und die
vorher gesäuberten Beeren hinzugeben. Nach Beendigung der Kochzeit die
Weinbeeren vom Hähnchen trennen und beiseite stellen. Das Hähnchenfleisch
mit seiner Kochflüssigkeit in den Mixer geben und die salzige Butter und den
Wein hinzufügen. Solange mixen, bis eine Creme entsteht. In eine Schüssel
geben und 15 Minuten im Kühlschrank ruhen lassen. Die vorbereiteten
Scheiben des Panettone Loison mit Pinot Grigio, die Hähnchenpastete und die
aufgeweichten Weinbeeren nehmen. Auf jede Scheibe einen Löffel Pastete geben
und in die Mitte eine Weinbeere drücken. Mit einer weiteren Scheibe abdecken.
Solange fortfahren, bis die Zutaten aufgebraucht sind. Anschließend 2 Stunden
im Kühlschrank ziehen lassen. Kalt servieren.

della pasta• sale
uocere i conchiglioni, in abbondante acqua salata, per 2/3 del tempo
riportato sulla confezione, scolarli e porli a raffreddare in una ciotola con
acqua e ghiaccio. Scolarli nuovamente e porli su un panno di cotone pulito.
Setacciare la ricotta, metterla in un mixer con il salmone, il pepe e il cucchiaio
di acqua di cottura della pasta. Frullare bene fino a quando il composto non
risulterà omogeneo.
Tostare la fetta di Panettone in forno per qualche minuto e sbriciolarla.
Mettere il composto di ricotta e salmone in una sac a poche e farcire i
conchiglioni.
Ungere la teglia con il burro, adagiare i conchiglioni, spolverarli con le briciole
di Panettone e mettere un piccolo ricciolo di burro su ognuno.
Cuocere in forno a 180 °C per circa 10 - 15 minuti, gratinando sotto il grill
per gli ultimi 2 minuti.
Far riposare qualche minuto e servire, accompagnati dall’ottimo Pinot Grigio
Impronta del Fondatore Alto Adige D.O.C. Santa Margherita.

• 1 slice Panettone Loison al Pinot Grigio
• 8 conchiglioni giant pasta shells• 100 g of cow’s milk ricotta• 100 g smoked salmon• 4 pink peppercorns
• butter• 1 tablespoon of the pasta cooking
water• salt
• 1 scheibe vom Panettone Loison mit Pinot Grigio
• 8 “Conchiglioni” (große muschelnudeln)
• 100 g ricotta aus kuhmilch
• 100 g geräucherter lachs• 4 rosa pfefferkörner• butter• ein löffel kochwasser der nudeln• salz
ook the conchiglioni pasta in salted water for two-thirds of the time

ie Muschelnudeln in viel Salzwasser für 2/3 der auf der Packung
angegebenen Zeit kochen, abtropfen lassen und zum Abkühlen in eine
Schüssel mit Wasser und Eis geben. Erneut gut abtropfen und auf ein sauberes
Baumwolltuch legen.
Den Ricotta durchseihen, mit dem Lachs, dem Pfeffer und einem Löffel
Nudelkochwasser in einen Mixer geben. Solange mixen, bis eine homogene
Masse entsteht.
Die Panettone –Scheibe einige Minuten im Ofen rösten und anschließend
zerbröseln.
Die Ricotta – Lachs – Masse in einen Spritzbeutel geben und die “Conchiglioni”
befüllen.
Ein Blech mit Butter einfetten, die Muschelnudeln darauf anrichten, mit den
Panettone – Bröseln bestäuben und jeweils mit einer kleinen Butterflocke
belegen.
Im Ofen bei 180°C für circa 10 – 15 Minuten garen und die letzten 2 Minuten
unter dem Grill gratinieren.
Einige Minuten ruhen lassen und dann mit dem hervorragenden Pinot Grigio
Impronta del Fondatore Alto Adige D.O.C. Santa Margherita servieren.

• 50 g circa di Panettone Loison al Pinot Grigio
• 300 g di vitello tritato (o 150 g di vitello tritato e 150 g di polpa di coniglio tritata)
• 120 g di di lardo pancettato o di pancetta tesa
• 1 uovo • 1 cucchiaio di Parmigiano
Reggiano grattugiato • 1 foglia di alloro • ½ spicchio di aglio • sale e pepe q.b.
ettere in una ciotola la carne tritata, l’uovo, l’aglio tritato con lo
spremiaglio, il Parmigiano grattugiato, la foglia di alloro sbriciolata
(se secca) o tritata finemente al coltello (se fresca), il Panettone sbriciolato;
insaporire infine con un pizzico di sale e una macinata di pepe.
Rivestire 4 stampini usa e getta da muffin con carta da forno bagnata e
strizzata e foderarli con il lardo pancettato o la pancetta tesa tagliati a fettine
non troppo sottili (dovrebbero occorrervi circa 4 fette a stampino), facendole
sbordare ai lati. Riempire con il composto di carne, pressando bene con le dita
e richiudere sopra il lardo/la pancetta.
Infornare le terrine a 150 gradi per 30-35 minuti (il lardo/la pancetta sopra
dovranno risultare croccanti e dorati), lasciarle raffreddare e sformarle,
prestando attenzione perché il lardo/la pancetta, sciogliendosi, avranno
rilasciato parecchio grasso sul fondo dello stampino. Servire le terrine con
un calice di Pinot Grigio Impronta del Fondatore Alto Adige D.O.C. Santa
Margherita.

• 300 g minced veal (or 150 g minced veal and 150 g minced rabbit)
• 120 g lardo pancettato or flat pancetta
• 1 egg • 1 table spoon grated Parmigiano
Reggiano • 1 bay leaf • 1 half garlic clove • salt and pepper to season
• Circa 50 g Panettone Loison mit Pinot Grigio
• 300 g kalbshack (oder 150 g kalbshack und 150 g gehacktes kaninchenfleisch)
• 120 g “lardo pancettato (doppelter schweinevorderrückenspeck mit einer einlage von
schweinebauchspeck) oder „pancetta tesa“ (gereifter bauchspeck)
• 1 ei• 1 löffel geriebener Parmesan• 1 lorbeerblatt• ½ knoblauchzehe• salz und pfeffer nach bedarf

Line four disposable muffin moulds with wet, squeezed baking paper and
strips of lardo pancettato or flat pancetta that are not sliced too thinly (about
four slices per mould are needed), ensuring the strips fall over the mould edge.
Fill with the meat mixture, pressing firmly with fingers, and seal with the ends
of the lardo/pancetta strips.
Bake the terrine at 150° C for 30-35 minutes (the lardo/pancetta covering
should be crispy and golden), leave to cool and tip out with care because the
lardo/pancetta will have melted a great deal of fat into the bottom of the
mould.
Serve the terrines with a glass of Pinot Grigio Impronta del Fondatore Alto
Adige D.O.C. Santa Margherita.

4 Einwegformen für Muffins mit Backpapier auslegen, das vorher befeuchtet
und ausgewrungen wurde, und darin den „lardo pancettato“ oder die „pancetta
tesa“, die in nicht zu dünne Scheiben geschnitten wurden ( es sollten ca. 4
Scheiben pro Form sein) so legen, dass sie über den Rand hinausschauen. Das
Fleischgemisch hineinfüllen, mit den Fingern gut andrücken und mit dem
überhängenden Speck verschließen.
Die Terrine bei 150 C° für 30 – 35 Minuten in den Ofen geben (der abdeckende
Speck soll goldbraun und knusprig sein), anschließend abkühlen lassen und
vorsichtig aus der Form nehmen (Achtung: der geschmolzene Speck hinterlässt
reichlich Fett auf dem Boden der Form). Die Terrine mit einem Glas Pinot
Grigio Impronta del Fondatore Alto Adige D.O.C. Santa Margherita servieren.

Veruska Anconitano
• 2 fette di Panettone Loison al Pinot Grigio
• Pinot Grigio Impronta del Fondatore Alto Adige D.O.C. Santa Margherita
• gocce di cioccolato fondente, quantità a piacere
• 1 baccello di vaniglia• 100 ml di latte• 100 ml di panna fresca• 3 tuorli• 50 g di zucchero
rendere il Panettone, spezzarlo grossolanamente e sistemarlo in un piatto
fondo. Bagnarlo leggermente con il Pinot Grigio facendo in modo che
non scoli.
Adagiare il Panettone dentro una terrina in modo da ricoprirne il fondo e
aggiungere le gocce di cioccolato.
Preparare la custard versando il latte e la panna in un pentolino antiaderente
insieme al baccello di vaniglia e portando a bollore. Nel frattempo sbattere
i tuorli con lo zucchero per creare una crema quindi, una volta che il latte e
la panna si sono scaldati, togliere la vaniglia e, a filo, aggiungerli alle uova.
Mescolare per bene, mettere di nuovo nel pentolino e mettere nuovamente sul
fuoco mescolando continuamente fino a quando non si addensa (non va fatta
bollire!).
Versare parte della custard dentro la terrina, aggiungere il Panettone restante
e le gocce di cioccolato e terminare con la custard restante.
Mettere in forno già caldo a 180 °C per 1 ora o comunque fino a quando
la superficie esterna non diventa bella compatta quindi spegnere e lasciar
intiepidire dentro il forno con lo sportello aperto. Servire tiepida decorando
con delle stelle di pasta di zucchero e, volendo, con un cucchiaio di gelato alla
vaniglia.

• bitterschokoladenstückchen, menge nach belieben
• 1 vanilleschote• 100 ml milch• 100 ml frische sahne• 3 eigelb• 50 g zucker
rumble the Panettone into large pieces and arrange in a bowl. Drizzle
lightly with Pinot Grigio, without soaking. Cover the bottom of a terrine
with the Panettone and add the chocolate drops. Prepare the custard by
pouring the milk and cream into a small non-stick saucepan, adding the vanilla
pod and bringing to the boil. In the meantime, beat the yolks with sugar to
create a cream; when the milk and cream have heated, remove the vanilla and
gently pour them into the eggs. Mix well, replace in the saucepan and return
to the heat, stirring continuously until the custard thickens, ensuring it never
comes to the boil. Pour part of the custard into the terrine, add the remaining
Panettone and chocolate drops, then finish with the remaining custard. Place
in an oven preheated to 180° C and bake for one hour until the upper surface
is nice and compact, then turn off the oven and leave the custard to cool there
with the door open. Serve tepid and decorate with sugar paste stars and, if
preferred, with a scoop of vanilla ice cream.

Leicht mit dem Pinot Grigio benetzen, ohne, dass er sich auflöst.
Den Panettone in einen Form legen, so dass er den Boden bedeckt, und die
Schokostückchen hinzugeben.
Die Englische Creme (Custard) zubereiten, indem die Milch und die Sahne in
einem beschichteten Pfännchen mit der Vanilleschote zum Kochen gebracht
werden. In der Zwischenzeit das Eigelb mit dem Zucker cremig schlagen.
Sobald die Milch und die Sahne erhitzt sind, die Vanilleschote entfernen, und
die Flüssigkeit langsam zum Ei geben. Sehr gut vermischen, erneut in das
Pfännchen gießen und auf den Herd stellen und solange umrühren, bis die
Masse fest wird (nicht zum Kochen bringen!).
Einen Teil der Englischen Creme in die Form geben, den restlichen Panettone
und weitere Schokostückchen hinzufügen und mit der restlichen Custard
bedecken.
Für circa 1 Stunde in den vorgeheizten Ofen bei 180°C stellen oder zumindest
solange, bis die Oberfläche schön kompakt ist. Dann die Hitze ausstellen und
im Ofen bei geöffneter Klappe abkühlen lassen. Lauwarm, mit Zuckersternen
dekoriert, und bei Belieben auch mit einem Löffel Vanilleeis servieren.
