“Cà d'Alfieri” is a self-contained rural retreat, in a beautifully restored19th-century stone building. Up to 20 guests can be comfortablyaccommodated in stylishly furnished rooms. The restaurant, housedin the converted cowshed, can seat up to 30 guests, whereas 10more visitors can be confortably seated in the lounge with largeinglenook fireplace. The farm breeds black Parma pigs and rabbitsand grows organic vegetables: they are the ingredients of a tastymenu that varies in season and is complemented by salami and othercured pork meat and home-made bread.

mushroom of Borgotaro and Albareto(excellent specimens are also found all acrossthe Apennine) is the only type of mushroomthat can boast the Protected GeographicalIndication (P.G.I.) designation, thanks to itsspecial organoleptic quality and fragrance.Porcini will fill of flavour the sauce for yourtagliatelle, or you could taste them as finelysliced, breaded and fried crisp half-moons,firm and tasty in a parsley-and-garlic-flavouredstew or as superbly scented grilled caps. Inwinter, then, dried porcini will make a creamyrisotto absolutely mouthwatering. Parmigianohas also been for centuries the pride of hilland mountain dairies. It is crumbly and mildin flavour, with faint savoury notes, an absolutelywholesome nourishment. It is made with milk,salt and rennet and is aged from 18 monthsto twenty-four, thirty-six months. Salumi (curedpork meats) are the perfect ingredient of anymeal during the day; they are excellent as asnack, at lunch, at tea time and for a lightdinner. The “art” of making them follows anancient rite, the memory and secrets of whichare kept jealously alive: the first sweet hamswere made here, as were salami and “coppa”(pork neck salami), or big “pancette” and rustic“cicciolata”; nowadays they are also made withmeat of wild living pigs of the ancient blackParmesan breed. Borgo Val di Taro e le sue valli sono famose in tutto il mondo per il suo fungo; da anni infatti la ricchezza principaledei boschi appenninici in Provincia di Parma, nello spartiacque tra l’Emilia, la Liguria e la Toscana, non è più lalegna da ardere (peraltro ottima e ricercata in tutto il Nord Italia) ma piuttosto i prodotti del sottobosco. In particolarei funghi porcini di Borgotaro sono conosciuti ovunque, addirittura da fine Ottocento allorquando molti montanariemigrarono in America e Inghilterra, esportando e facendo conoscere questo prodotto. Nonostante quest’anticanotorietà, il Fungo di Borgotaro è un marchio molto giovane: il riconoscimento I.G.P. (Indicazione GeograficaProtetta) è stato ottenuto nel 1993 dal Ministero dell’Agricoltura e Foreste e nel 1996 dalla CEE. Nel 1995 èstato costituito il Consorzio per la Tutela dell’I.G.P. “Fungo di Borgotaro” per garantire e promuovere il porcino.
Il prodotto è rappresentato dal carpoforo (ossia il frutto) di quattro specie di Boletus (B. edulis, B. aestivalis, B. pinophilus e B. aereus) allostato fresco, raccolto nei boschi all’interno di un’area delimitata che comprende i territori dei Comuni di Albareto e Borgo Val di Taro in Provinciadi Parma e Pontremoli in Provincia di Massa-Carrara. Il porcino di Borgotaro è considerato superiore per qualità organolettiche, olfattive edaromatiche, rispetto ad altri provenienti da diverse zone sia italiane che estere.La provenienza del prodotto è tutelata attraverso una serie di controlli all’interno dei diversi elementi della filiera fungo che sono rappresentatidai produttori (i proprietari dei boschi all’interno dell’area I.G.P.), dai raccoglitori (cioè chi svolge attività di raccolta dei funghi) e dai commercianti(coloro che acquistano il prodotto dai raccoglitori per poi confezionarli e commercializzarli).
La fama del Fungo di Borgotaro attrae in valle migliaia di appassionati cercatori provenienti da ogni parte d’Italia. Per far fronte ad un’invasioneindiscriminata dei boschi (con conseguente distruzione dell’ecosistema fungo-pianta) dagli anni Sessanta le Comunalie, che rappresentano lemaggiori proprietà boscate a vocazione fungina del comprensorio, hanno istituito apposite riserve per la raccolta dei funghi: le regole cheoccorre rispettare sono, tra le altre, i giorni di chiusura, il massimo raccolto consentito ed il pagamento del tesserino (il cui ricavato vienereinvestito in opere di forestazione). Grazie alla promozione effettuata da alcuni anni a seguito del riconoscimento dell’IGP, il territorio sopportacarichi di cercatori con punte di trentamila presenze all’anno, esclusi quelli locali.
Il veicolo promozionale più importante è il sito www.fungodiborgotaro.com al quale sono registrati circa duemila utenti che ricevonoperiodicamente tramite e-mail notizie su eventi locali e sulla crescita dei funghi nella vallata. La sezione del sito più visitata è il Forum nel qualesi confrontano oltre mille appassionati di funghi di tutta Italia e che inviano oltre centomila messaggi ogni anno.La mancanza di abbondanti quantità marchiate “Fungo I.G.P.” fa del porcino un prodotto di nicchia molto rinomato; sostanzialmente si è decisodi premiare la qualità piuttosto che la quantità, sperando che il consumatore ci dia ragione!
