serves 8 people
1. Bring 6 quarts of water to a boil in a large pot, and add 2 tablespoons salt. Set up
an ice bath next to the stovetop, and add the oil. Drop the pasta into the boiling
water, 6 or 7 pieces at a time, and cook until tender, about 1 minute. Transfer to
theicebathtocool,thendrainonkitchentowels,layingthepastaflat.
2. Preheat oven to 375F.
3. Inamediumsaucepan,heatbutteruntilmelted.Addflourandstiruntilsmooth.
Over medium heat, cook until light golden brown, about 6 to 7 minutes.
4. Meanwhile, heat milk in a separate pan until just about to boil.
3. Add milk to butter mixture 1 cup at a time, whisking continuously until very
smooth and bring to a boil. Cook 30 seconds and remove from heat. Season with
salt and nutmeg and set aside.
5.Strainthesaucethroughafinesieveandintoacleanbowl.Thesaucewillkeepat
room temperature for up to a few hours.
6. In a large Dutch oven or saucepan, add olive oil and heat. Add onions, and cook
until very soft and beginning to caramelize.
7. Mix together all of the meats. Add the meats to the pan and cook until they begin
to brown.
8. Add the wine and continue to cook until most of the liquid is evaporated—it
should just be moist around the edges of the meat. Add the tomato paste and
stir well. Bring to a simmer. Reduce heat to low and cook for 20 minute.
9. Assemble the vincisgrassi in a 10-by-20 inch lasagne pan (or use two 9-by-12
inch pans): Spread a layer of ragu over the bottom and top with a sprinkling
of Grana Padano, a layer of pasta, a layer of besciamella, another layer of ragu,
a sprinkling of Grana Padano, and pasta. Repeat until all ingredients are used
up,finishingwithalayerofpastatoppedwithbesciamellaandasprinkling
of Grana Padano.
10. Bake for 45 minutes, or until the edges are browned and the sauces are bubbling.
Let stand for 10 minutes before serving.
