Vitigno: Friulano in purezzaTipologia di vino: Bianco seccoNome vigneto: “Casa”, situato nel Comune di Cividale del FriuliNatura del terreno: Rocce marnose-arenacee di origine eocenica, ricche di sali minerali e di molti altri micro-elementiAltitudine: 180 mt. slmAnno impianto: 1983Esposizione: Sud-ovestProduzione di uva per ettaro: 80 q.liForma di allevamento: CappuccinaVendemmia: Tardiva; manuale con cernita delle uveVinificazione: L’uva raccolta viene delicatamente diraspata. Segue pressatura soffice delle uve ed il mosto così ottenuto viene chiarificato tramite decantazione. La vinificazione prosegue con la fermentazione alcolica a temperatura controllata (18°-20°C) in recipienti di acciaio inox. Terminata la fermentazione, il vino viene affinato per 3-4 mesi in serbatoi di acciaio inox, avendo particolare cura nella conservazione ed evoluzione delle “fecce nobili”, con delle frequenti movimentazioni.

Al palato si presenta fine, delicato, pieno e grasso, con notevole sentore di mandorla amara.Abbinamenti gastronomici: Ottimo vino da aperitivo e da antipasti magri. Ideale con primi piatti conditi con sughi a base di verdura, piatti di pesce salsati o carni bianche e formaggi. Eccellente con il prosciutto di San Daniele.

Soft pressing of the grapes follows and the obtained must is clarified through decantation. The vinification continues with the alcoholic fermentation which takes place in temperature controlled (18°C-20°C) stainless steel tanks. Once the fermentation is complete, the wine is refined in stainless steel vats for 3-4 months. Particular care is taken in the preservation and evolving of “noble” dregs, by means of frequent stirring.

Danach werden die Trauben leicht gepresst und der daraus entstandene Most wird dekantiert und geklärt. Die alkoholische Gärung setzt die Vinifikation fort, dabei wird die Temperatur in Inox-Tanks ständig unter Kontrolle gehalten (18°-20°C). Nach der Gärung, wird der Wein während 3-4 Monaten in Inox-Tanks verfeinert, wobei besonders auf die Konservierung und Evolution des „Schönungstrub“ geachtet wird, der Most wird mehrmals in Bodennähe abgelassen und nach oben in den Behälter gepumpt.

Ideal with first courses prepared with vegetable-based sauces, fish dishes accompanied by sauces, white meats and cheeses. Excellent with San Daniele cured ham.
