• 2 volte in calendario (Marzo e Novembre) • 4 edizioni di Ring Test Formaggio• 7 diversi formaggi• Rigorosamente Formaggi Italiani• 6 metodi di prova (Umidità, Grasso, Sale, Proteine,
pH, Ceneri)• 3 elaborazioni statistiche (generale, normati, NIR)• Partecipano circa 40 laboratori, con più metodi di
prova e/o operatori.

• NaCl = FIL- IDF 17 A :1972 (titrimetrico)• Proteine = ISO 8968-2:2001 IDF 20-2:2001

CONCLUSIONI
• Gli outlyers per l’umidità si sono ridotti•• I dati di z-score rientrano nella fascia di buono,
migliorato per l’umidità (dove erano più alti i non soddisfacente)
• Dal confronto tra tutti i metodi, normati e NIR la media dei valori molto soddisfacenti, non si può dire lo stesso per la r e R, anche se migliorati per l’umidità.
