Una lanterna a base quadrata, sulla quale è sospesa una copertura a falde leggermente in-clinate rivestite di zinco, rappresenta l’unica emergenza fuori terra delle Cantine Baigorri. Una scatola di vetro, completamente vuota, che accoglie i visitatori immergendoli in uno spazio che segna il limite tra il paesaggio circostante coperto di vitigni, nella località di Samaniego e della Sierra de Cantabria, e la grande cantina ri-cavata nel terreno. Questo padiglione di cristallo si assesta su un basamento, innestato nel terre-no, rivestito di tavole strette e lunghe di legno, il cui colore sembra costituito degli stessi pigmenti della terra che lo lambisce. Il dualismo cromati-co coinvolge tutto il progetto: i toni scuri, caldi, che dalla terra contaminano il legno del basa-mento, fino a raggiungere la zona più profonda della cantina, dove trovano posto le barriques di rovere; i toni chiari caratterizzano gli spazi inter-ni di cemento a vista e, in particolare quelle zone che raccolgono le varie fasi del processo e che necessitano di una buona illuminazione. L’ac-ciaio inossidabile delle finiture, dei macchinari, e delle botti di fermentazione riflette la luce dei grandi apparecchi illuminanti sospesi, moltipli-candone l’effetto. L’interno dell’involucro acqui-sta un forte carattere monolitico dovuto all’uso esteso del calcestruzzo ed alla coerenza croma-tica con la quale è stato scelto il grès porcella-nato antisdrucciolo che riveste tutti i pavimenti, la cui elevata resistenza alle aggressioni mecca-niche, agli agenti chimici e la facilità di pulizia, lo rendono perfettamente adatto a sostenere le sollecitazioni alle quali è sottoposto.La scelta ipogea trova conferma nell’organizza-

A square-based lantern, over which is suspended a gently pitched roof covered in zinc, represents the only above-ground structure of the Wine-making concern Baigorri. A glass box, entirely empty, greets visitors, enveloping them in a space that marks the boundary between the sur-rounding landscape filled with vineyards, in the localities of Samaniego and Sierra de Cantabria, and the great wine cellar dug out of the ground. The glass pavilion stands on a base, grafted into the earth, covered with long, narrow wooden boards whose color seems to be made from the same pigments as the earth around it. This chro-matic dualism is a theme that runs through the whole project. The dark, warm tones issuing from the earth to contaminate the wood of the base reach into the farthest depths of the wine cellar, where the oaken barriques are found. Lighter tones are distinctive of the exposed con-crete interiors, especially in the zones where the various stages of the wine-making process are carried out and good lighting is required. The stainless steel of the trim, of the machinery and of the fermentation tanks reflects the radiance of the great hanging light fixtures, multiplying their effect. The interior of the shell takes on a strongly monolithic character due to the exten-sive use of concrete and to the consistent color scheme in which slip-proof hard-fired grès has been chosen for all of the floors. The high resist-ance of this material to mechanical aggression and chemical agents as well as its easy cleaning make it perfectly suited to withstand the stresses to which it is subjected.The decision to build underground is further

zione funzionale, elaborata e definita in sezione seguendo le fasi del processo produttivo. Pro-cedendo dall’alto verso il basso, il programma della cantina si sviluppa su livelli distinti. Le uve arrivano con gli autocarri che entrano nell’edifi-cio e scaricano al livello +0,30. Dopo una selezio-ne dei grappoli, il processo avanza e il materiale scende ai livelli inferiori per la macerazione, la fermentazione, fino alla grande sala voltata delle barriques, caratterizzata da temperatura e valori igrometrici rigorosamente controllati. A questo stesso livello si trova la sede sociale che, da una parte è aperta sulle vigne, e dall’altra, una pare-te vetrata consente la vista delle barriques. La zona amministrativa si trova al livello immedia-tamente inferiore alla lanterna, ed è corredata di un negozio di vini e prodotti artigianali, di una sala per proiezioni, una sala espositiva ed una dedicata alla degustazione, ognuna delle quali è separata dalle altre attraverso pareti traspa-renti. La volontà di suggerire uno spazio unico, un ambiente che possa essere percepito dai visita-tori nella sua globalità, si ritrova anche ai piani inferiori, dove i solai si aprono ed i collegamenti verticali sono assicurati da grandi rampe che

Proceeding from top to bottom, the wine-production program is carried out on different levels. The grapes arrive on trucks that enter the building and unload on level +0.30. Af-ter the grapes have been sorted, the process ad-vances and the material descends to the lower levels for crushing and then fermentation, until it reaches the great vaulted hall of the barriques, where temperature and humidity are strictly controlled. On this same level is the company’s headquarters; one side opens onto the vineyards, the other consists of a glass wall through which the barriques can be seen. The administrative of-fices, located on the level just below the lantern, include a shop that sells wine and handcrafted articles; a slide projection room, a display area and a room dedicated to sampling. Transparent walls divide each area from the others. The intention of suggesting a single space, an in-terior that can be perceived by visitors in a global view, appears again on the lower levels, where the floors open out and the vertical connec-tions consist of broad ramps, a solution which

La sezione longitudinale mostra il raccordo tra la costru-zione ed il profilo del terreno e l’interno delle cantine appare come un enorme contenitore. Lo spazio è facilmente percorribile ed il processo di lavorazione delle uve può essere seguito com-pletamente.Gli elementi strutturali sono in gran parte pre-fabbricati, in quanto le armature sarebbero state molto costose per il tipo di struttura scelta dal progettista, l’architetto Iñaki Aspiazu Iza. L’im-piego di cemento armato precompresso per i solai è stato necessario sia per gli elevati cari-chi a cui sono sottoposti, sia per le ampie luci coperte.Il tentativo di organizzare l’edificio secondo un programma razionale che aderisse perfettamen-te alle esigenze della committenza e, allo stesso tempo, la volontà di realizzare un’architettura attenta ai suggerimenti del contesto, hanno so-stenuto tutto il progetto. Il risultato è di assoluto rispetto nei confronti del paesaggio, e i filari di vitigni, che corrono lungo la superficie del colle, sembrano attraversare il crinale come se non esistesse interruzione.

The longitudinal section shows the link between the construction and the contour of the land, and the interior of the wine cellar appears as an enormous container. The space is easy to move about in and every stage in the wine-making processing can be followed.The structural elements are in great part prefab-ricated, since reinforcement would have been very expensive for the type of structure chosen by the designer, the architect Iñaki Aspiazu Iza. The use of prestressed reinforced concrete for the floors was obligatory, due both to the heavy loads to which they are subjected and to the wide spans covered.The entire project has been planned in the in-tention of organizing the building according to a rational program that perfectly satisfied the client’s requisites, while simultaneously creat-ing an architecture in harmony with the sug-gestions of the context. The resulting structure is totally respectful of the landscape, and the rows of grapevines that run up the hill seem to cross the ridge as if no interruption of any kind existed.
