Vini d’italia is the product of a unique group effort. It embodies the

story of a year of tasting, travel, visits. This year over sixty experts have managed to taste 45,000 wines, reviewing 20,000 labels from over 2,300 wineries.

It has always followed the same method: rigorously blind tastings, evaluations made not by an individual but always by a panel, and finally, the classic rating by glasses, from one to three. a nationally popular dish, spaghetti, garlic, oliVe oil and hot red peppers or peperoncino, a valid comfort food for all ages, and famously, at any time of day. We know how to prepare it with our eyes closed, but the choices for each ingredient are infinite: spaghetti, vermicelli or linguine? The garlic question: mashed, grated, chopped, with or without the central rib? And then there’s the peperoncino, chili pepper: fresh, dry, with or without seeds, Italian or maybe Thai? How much and which olive oil? For

our midnight spaghetti feast, we stuck to the classics: durum wheat pasta, extra-virgin oil from Lake Garda made from pitless Leccino olives by Comincioli, fresh peppers without seeds and chopped garlic.

Siddi wine Festival:It takes a villageThe Siddi Wine Festival is unique. We’re in Sardinia, in the Medio Campidano zone, 50 kilometers north of Cagliari. The village has fewer than 700 inhabitants, but one of them is Roberto Petza, an extraordinarily talented chef who won Tre Forchette in the most recent Gambero Rosso restaurant guide. His cuisine demonstrates an original, dynamic vision of tradition at an amazing price for the quality. He left the city of Cagliari for this village in the countryside and a return to the values of the land, the vegetable garden. He wanted to focus on sustainability, on both food and wine products.We had the pleasure of attending the Siddi Wine Festival, an event on a human scale that he founded. For two days, Siddi became the center for artisanal wine. Over 100 Sardinian producers and many from the rest of Italy, enlivened the village’s narrow streets. A dense calendar of meetings, seminars, cooking shows and outdoor debates featured some of the greats of Italian food, such as journalist Paolo Marchi, sommelier Giuseppe Palmieri and Alessandro Pipero. The search for more immediate and comprehensible wine language, the theme of environmental sustainability and the importance of training restaurant personnel were among the subjects discussed. This unusual vodka is produced near the virgin forest of Bialowieza that

straddles the border between Poland and Belarus. It takes its

name from a local breed of horse, Konik. Pleurat

Shabani, who created and produced Konik’s

Tail vodka, was born in Croatia, but was forced

to leave when war broke out. He landed in London where he became a successful

barman and refined his interest in vodka.

Konik’s Tail is not an ordinary vodka. It is intended for

meditative sipping so that the perfectly distinguishable

flavors of its ingredients – farro, rye and wheat chosen by Shabani and used in the

distillation – can be savored. It offers striking aromas and a round, full flavor that is sharp at the start, but mouth-filling

and soft on the finish. It is the vodka that the 50 best

bartenders in the world name as their favorite, according to

research published in Drinks International. Unlike other

vodka, Konik’s Tail is not served particularly cold, so

that all its nuances emerge.

a corner of umBria in the heart of hong Kong: Marco Gubbiotti, a renowned Umbrian chef, launched this adventure

in May of 2013, opening Il Milione on the ground floor of the prestigious Hutchinson House in the center of Hong Kong. The exquisitely designed restaurant serves Umbrian dishes in elegant surroundings. The glamorous cocktail bar is in classic European style. On hexagonal shelves is a vast selection of rare and vintage bottles, including 76 different labels of gin ready to be mixed into creative and classic cocktails of infinite variety. long drinks are the purView of giancarlo Mancino, an Italian cocktail bar consultant. One specialty is Negroni Vintage, a mix of Mancino Vermouth Rosso Amaranto or Americano with equal parts of Campari and gin, a favorite of Francis Ford Coppola. Circular lamps and mirrors on the restaurant ceiling add depth to the luxurious room, creating a warm, inviting atmosphere. The kitchen, despite its distance from the home region, conveys the flavors and aromas of Gubbiotti’s origins. Creativity informs the presentation and re-imagining of traditional dishes. Elisabetta Foradori, Our Lady of Trentino Wine, is the

supreme interpreter of the Dolomite terroir as well as president of the Consorzio

I Dolomitici. Her wines are tended at every step

according to the rhythms and methods of biodynamic

agriculture. Stubborn and expert, she patiently

experimented and studied, working out growing methods

and cellar techniques in which nature determines the

events. Results are superb and have been recognized

abroad as well. Our wine of the month is Manzoni

Bianco Fontanasanta 2011, a white that is delicious

today and will be in a class by itself in a few years. The

variety is a cross between pinot bianco and riesling.

The wine undergoes a week of maceration on skins, then aging in acacia barrels for 20 months. It has extraordinary

character, starting slowly with a hint of volatility that

then opens onto luminous sensations of dried flowers,

medicinal herbs, newly-cut hay and mountain

fragrances. Acidity and brine meet in a deep,

generous finish. Save it for a couple of years in your

cellar, if you can…

Scrigno del Duomo is magnificently located in piazza del Duomo, facing the Fountain of Neptune and with Renaissance palaces nearby. Inside, the entrance area is a patio, wine bar and typical Trentino osteria, while two interior rooms are the restaurant proper. The kitchen is glassed-in and visible. Chef Alfredo Chiocchetti is the maestro of many young cooks who have trained with him. He has constructed two menus, one creative and one traditional, a wide choice of vegetarian and seasonal dishes, and an ample wine list with a large selection of bottles by the glass. Taste the guanciale braised in Teroldega, a typical wine of the zone, served with corn chips or try trout rolled with herbs.

Imagination and research show up in the eggplant puree with burrata and mullet bottarga mayonnaise. Tradition is behind the cappelletti filled with goat milk ricotta, bell pepper purée and rose petals, the variations on lamb dishes, in the baccalà, and in the range of game offered. Many types of bread are baked in house and served along with an excellent choice of cured meats and cheeses.

Quality and identity are our watchwords.”About her commitment to OFFIDA Docg Pecorino and Docg Passerina, both indigenous monovarietals, she says “We are also dedicated to the consolidation of Rosso Piceno, and to the Superiore type, which is already known and recognized, and to the Falerio denomination. We can and must focus more on spotlighting the distinctive character of these grapes. We can promote the territory through its excellent products because our protected wine denominations are surely the first line of promotion of the Piceno.”

What are the three key words that define Tenuta di Bibbiano? Here’s an image, rather than a concept. Take a tree and its roots.Bibbiano is the taproot. Everything I do, and communicate is the taproot, the spirit of the place. This site goes back to Roman times although the first official document is from 1089. Passion and authenticity are everything.

Tell us about the decision to cultivate organically.I was in the industrial world for years and I developed a sensibility in the field. For 10 years, we used lotta guidata or integrated pest management in the vineyard, and moving on to organic agriculture was a natural step forward. The improvements in the wine are evident in the glass.

What do you expert from the Roadshow?I hope to meet capable and expert people. I want to leave them with an impression of our territory, appellation, the history of Gallo Nero, the value of Bibbiano. We don’t have to find new countries but just consumers who can appreciate our territory’s quality. Chianti Classico once again has to strengthen its elite image.

Where’s the right place to taste your wines?Above all at the Osteria della Loggia – in Siena, a few meters from Piazza del Campo – they know our wines and our winery well. Then, in Washington D.C., at the Bibiana Restaurant. It sounds like a play on words, but it’s a very traditional Italian restaurant, faithful to our cuisine. Try our Chianti with their wild boar pappardelle. And finally, at the Albergaccio, an historic Castellina in Chianti restaurant. Besides these, the Tenuta di Bibbiano also has its own agriturismo, another reason to visit one of Chianti Classico’s most beautiful crus.

Tommaso Marrocchesi Marzi is a member of the fifth generation of winemakers at Tenuta di Bibbiano, located in Castellina in Chianti, in the heart of Chianti Classico. Vineyards are managed

organically, and in the winemaking cellars, procedures are minimalist, with everything based on the quality of the grapes. The results are labels full of character and personality that have shown, with comforting continuity, clear expressivity and ties to the territory.The etichetta nera, already bottled in 1969, is the Chianti Classico that reveals a return to a hyper-traditional style – drinkable, flavorful and energetic. Chianti Classico Montornello, aged in barrique, shows more complex notes of fruit and underbrush. The reserve label, Chianti Classico Vigna del Capannino, comes from the southern slope where clones of sangiovese grosso grow.
