    Cherry Cinnamon Loaf Cake

    Yields 2 loaves

    Ingredients

    3 cups Unbleached All-Purpose Flour

    1 cups Granulated Sugar

    2 tsp Ground Cinnamon

    tsp Salt

    2 tsp Baking Soda

    2 Cups Water

    2/3 cups Canola Oil

    2 tbsp Apple Cider Vinegar

    2 tsp Vanilla Extract

    1 cup Sweet Cherries, stems and pits removed

    1 tsp honey

    1. Preheat oven to 350* and lightly grease two loaf pans.

    2. Place cherries and honey into a blender and blend until there are no more large chunks.

    3. In a large bowl add flour, sugar, cinnamon, salt and baking soda and mix well.

    4. In another bowl mix together water, apple cider vinegar, and vanilla extract.

    5. Add dry ingredients to the wet ingredients and mix until just combined. Carefully fold cherries into

    the batter.

    Divide the batter between two loaf pans and bake for 40-45 minutes or until a knife inserted comes out

    clean.

    6. Allow loaves to cool for 10 minutes before transferring to a wire rack to finish cooling. Once cool

    sprinkle with powdered sugar or serve with a scoop of coconut ice cream and enjoy!!
