Approfondiamo l’argomento con Matteo Manuzzato, Green & Roasted Coffee Master di Diemme.«Sempre più spesso, anche in Italia, si sente parlare di caffè monorigine, addirittura specialty e provenienti da una sola piantagione. Se questo da un lato ci ha permesso di ridurre la distanza dai produttori, di apprezzarne il lavoro, conoscere nuovi profumi e sapori, constatare le diversità di caffè provenienti dallo stesso Paese ma coltivati, raccolti e lavorati in maniera diversa, dall’altra ci ha fatto perdere un po’ di vista la nostra identità.Perché, se è vero che il consumatore è sempre più preparato, curioso e disponibile a provare nuove esperienze sensoriali, è altrettanto vero che sente il bisogno di trovare all’interno di un esercizio pubblico la propria zona di confort, che generalmente è rappresentata proprio da una miscela di caffè provenienti da diversi Paesi d’origine.Sono le miscele di caffè a raccontare la storia dell’azienda, a esprimere il marchio di fabbrica e a rappresentare il nostro biglietto da visita.Ogni origine che compone la miscela è pensata con l’idea di affidarle un ruolo da protagonista, per apportare valore, e viene sfruttata al massimo per creare aromi, gusti e sensazioni uniche.Pensare a come creare una miscela di caffè che sia in grado di produrre una perfetta armonia in tazza equivale a pensare a una ricetta in cucina, in cui ognuno degli ingredienti trova una collocazione specifica ed è in grado di arricchire il piatto.Miscelare i diversi caffè presuppone ragionamenti specifici, ci permette di confezionare un abito su misura al nostro cliente e comporta grande studio, ricerca e conoscenza.Creare un prodotto sulle basi delle aspettative, piuttosto che subirne la natura oggettiva è decisamente affascinante: fa parte della nostra storia, è parte della nostra arte e della nostra cultura e negli anni ci ha permesso non solo di tramandare di generazione in generazione aromi e sapori assolutamente distintivi, ripetibili e affidabili grazie alle nostre miscele (in particolare la miscela Oro e la miscela Super, fiori all’occhiello della nostra produzione), ma anche di realizzare progetti dedicati, nonché miscele pensate in occasione dei momenti più significativi dell’anno, come ad esempio il periodo natalizio, durante il quale ci presentiamo ai nostri clienti con la Jingle Blend.Ogni volta che mi trovo nelle condizioni di dover creare una nuova miscela vivo un’esperienza unica, percepisco l’importanza dell’incarico che mi è stato affidato, provo l’emozione dell’attesa nel capire se sono riuscito a produrre una ricetta in grado di soddisfare le aspettative.Non bastasse la soddisfazione che deriva dal riuscire a tostare al meglio il caffè che abbiamo a disposizione, ecco una nuova affascinante sfida quotidiana: ovvero quella di continuare a essere creativo realizzando nuove e irripetibili ricette».

We discuss the topic with Matteo Manuzzato, Diemme Green & Roasted Coffee Master. “More and more often, including in Italy, we hear people talking about single-origin coffee, about specialty coffees and coffees from a single plantation. While this allows us to reduce the distance from producers, to appreciate their work, discover new aromas and flavours, and explore different coffees from the same country but grown, harvested and processed in different ways, it has also caused us to lose sight of our identity to a certain degree.

Because, while it’s true that consumers are increasingly informed, curious and willing to try new sensory experiences, it is equally true that they are

looking for a comfort zone in a coffee shop, which is generally represented by a blend of coffees from different countries

of origin.Coffee blends tell the story of the company, express

the brand and represent our calling card.Each origin that makes up the blend is chosen to

play a starring role and to add value, and is used to the fullest to create aromas, flavours and unique sensations.Considering how to create a coffee blend capable of producing perfect harmony in the cup is like creating a recipe in the kitchen, in which each of the ingredients plays a specific role and enriches the dish.Blending different coffees requires specific reasoning, allows us to create something tailored to our customer and involves a great

deal of study, research and knowledge.Creating a product based on expectations,

rather than being subjected to its objective nature is definitely charming: it’s part of our

history, our art and our culture. Over the years, not only has it allowed us to pass on from generation to

generation aromas and flavours that are truly distinctive, repeatable and reliable thanks to our blends (in particular

the Oro and Super blends, the pride of our production), but also to conduct dedicated projects, as well as blends created for the most

important times of the year, like Christmas, when we offer our customers our Jingle Blend.Every time I have to create a new blend it’s a new and unique experience; I am aware of the importance of the task entrusted to me, I feel a sense of anticipation to see whether I have succeeded in creating a recipe capable of meeting expectations.As if the satisfaction that comes from roasting the finest coffee we have available wasn’t enough, I now have a new daily challenge: to continue being creative, coming up with new and unique recipes".

Il caffè è un colore di tonalità marrone dorato, assomiglia al terra di Siena, è vibrante, luminoso, caldo e può essere utilizzato per dipingere, come fosse un acquerello, con alcuni accorgimenti. In primis, il caffè è una bevanda, un “colore” naturale filtrato nell’acqua; questo significa che non si tratta di un colore realizzato da pigmenti finemente macinati e mescolati con un legante, perciò il caffè non si “comporterà” come un acquerello.Può essere utilizzato da solo o a tecnica mista assieme a matite colorate, normali o acquerellabili, chine e acquerelli. Se utilizzate penne a inchiostro, consiglio quelle che non reagiscono all’acqua, che si possono facilmente trovare anche di colore marrone. Molto importante è la carta: per assorbire al meglio il caffè, vi serviranno fogli ruvidi.Per i vostri primi esperimenti usate il classico album di carta A4 che trovate in una qualsiasi cartoleria, dalla grammatura abbastanza spessa, di circa 200g/m²: fogli più sottili sono troppo leggeri e potrebbero rovinarsi con due pennellate. Se vi appassionerete alla tecnica, vi consiglierei di passare successivamente alla carta da acquerello, che può essere di vario tipo e grammatura. Penso sia importante cominciare con un semplice album scolastico, per poter sentire poi la differenza con una carta più pregiata (che si acquista nei negozi

di belle arti). Inoltre è particolarmente bello poter esplorare diversi fogli e poter scoprire la carta che va meglio per noi; per me è stata una vera caccia.La stesura del caffè, come colore, ha delle limitazioni. Per un miglior controllo della velatura (e per velatura intendo una passata di colore), ne consiglio una solamente. Con l’acquerello è possibile fare più velature, anche una sopra l’altra, per creare contrasti, chiaro-scuri o tonalità di colore ibrido, le quali si amalgamano in modo elegante. Purtroppo il caffè steso a più strati non riesce a mantenere lo stesso effetto. Pertanto gli scuri o i contrasti dovrebbero essere fatti a matita o con altre tonalità di acquerello, una volta che il caffè sulla carta risulti asciutto.In genere utilizzo il caffè come fondale, sfrutto il bianco del foglio e mescolo le altre tonalità ad acquerello. A seconda dell’umore gioco con le matite acquerellabili e con inchiostri che reagiscono una volta bagnati.

PAINTING WITH COFFEEby Kimberly McKeanCoffee has a golden-brown hue, similar to Siena. It is vibrant, bright and warm and can be used to paint, as if it were a watercolour, although with a few adaptations. First, coffee is a beverage, a natural "colour"

filtered in water; this means that it is not a colour made by finely ground pigments mixed with a binder, so coffee will not "behave" like a watercolour.It can be used alone or with mixed media such as normal coloured pencils or watercolour pencils, India inks and watercolours. If using inks pens, we recommend using ones that do not react to water. These can be found easily in brown.The paper is very important: you will need rough paper to best absorb the coffee.For your first experiments, use a traditional A4 sketchbook available at any stationer’s, with a significant weight, about 200 g/m²: thinner sheets are too light and could be ruined with just a few strokes. If you enjoy the technique, I would recommend you then move to watercolour paper, available in various types and weights. I think it is important to begin with a simple sketchbook in order to be able to notice the difference with finer paper (available at art shops). It is also particularly enjoyable to experiment with different papers and to discover the paper that is best for us; it was a real hunt for me.Applying coffee as a colour has limitations. To best control the glazing (and by glazing I mean a stroke of colour), I recommend only one stroke. With watercolours, you can apply several strokes, including one on top of the

other to create contrasts, chiaroscuro or to blend colours, which combine very elegantly. Unfortunately, coffee does not have the same effect when applied in more than one stroke. So, darks or contrasts will have to be done in pencil or with other watercolour hues, once the coffee has dried on the paper.As a general rule, I use coffee as a background, I exploit the white sheet and blend the other watercolour shades. Depending on my mood, I play with watercolour pencils and with inks that react when wet.

Gabriel Kaufman, una storia di successo in Israele

“Israele è un Paese che nasce dai sogni e dalla speranza”, scrisse Amos Oz. Un viaggiatore indefesso difficilmente ripercorre lo stesso sentiero, ma ogni volta che prova a comprendere questa terra millenaria, colorata e feconda, carica di passato e gravida di futuro, inevitabilmente si trova a farvi ritorno e a scoprirsi sempre in ascolto. Ho ripetuto la mia visita in Israele due volte, in un viaggio ottobrino ancora cocente, profumato, rigoglioso, dalle luci mediorientali riflesse sulla pietra ocra e sul deserto intensamente arancione, e in un fine dicembre quanto mai temperato e restio alla pressione dell’inverno.Il melograno è uno dei simboli di questa terra, e nella religione ebraica rappresenta l’abbondanza e la prosperità. Israele è questo: la ricchezza di una terra meravigliosa risuonante di voci, credi e storie provenienti da ogni dove, nata dal seme di un passato fastoso e all’alba di un sogno in perenne rinnovamento. E’ il sogno che ha creato la città di Tel Aviv accanto alle rive dell’antico porto di Giaffa, un guazzabuglio di grattacieli costruiti sulle sabbie del Mediterraneo dinanzi a un gioioso lungomare di beachers, yogi, ciclisti e locali modaioli e cosmopoliti. Branche di multinazionali, prestigiose università, musei, infrastrutture e avanguardie internazionali hanno portato la modernità nel cuore del Medio Oriente, che tutt’ora serba la sua peculiarità nel variopinto caos urbano, nei ritmi lenti, nei colori del cielo, nei tramonti, nei sapori irresisistibili di challah, datteri, sicomori, hummus e falafel e in un sorso di arak. Laddove il progresso incontra la mediterraneità nasce l’unicità di Israele. La storia del Mediterraneo ha reso questa terra imprescindibile nel corso dei secoli incorniciando e custodendo le sue incomparabili bellezze: un tramonto sul mare accanto alle rovine di Cesarea, un’alba dalla fortezza di Masada sulle rive del Mar Morto, la Cittadella Crociata del porto di Akko, le secche e aride valli del Qumran e di kibbutz e monasteri sperduti nel deserto del Negev, i giardini di Haifa, e infine, l’eterna città di Gerusalemme. Crocevia di popoli, immortale seppur mutevole, garante di storie

e antichi racconti, frenetica e gioiosa sia per le vie dei suq della Città Vecchia che del mercato di Mahane Yehuda, e spesso silente abbarbicata sui suoi colli o all’ombra di un ulivo solitario.Ma ancora, il potere di questa terra è di inondarci con la sua bellezza e di non condurci a un’opinione, richiamandoci a un deliberato ascolto: di idiomi, di preghiere, di storie, del mare, di grilli, di oud, di ritmi atavici e pacifici e di un chiasso avido di scintillante futuro. Chissà, magari in compagnia di un buon caffè.

DISCOVERING THE ANCESTRAL LAND OF ISRAELby Claudia Zecchin“Israel is a country born from dreams and hope”, wrote Amos Oz. A tireless traveler hardly traces the same path, but any time he tries to understand this millenary, colorful and thriving land, fraught with the past and pregnant with future, he finds himself eager to return and curiously listening. I visited Israel twice, in a still scorching, flourishing and scented October, reflecting Middle Eastern lights on ocher stones and on a deeply orange desert, and at the end of a mild and reluctant-to-winter December. Pomegranate is one of the symbols of this land, which means abundance and prosperity in the Jewish religion. Israel is just this: the richness of an amazing land resounding with voices, beliefs and tales from all over the world, born from the seeds of a sumptuous past and at the dawn of a dream in constant renewal. It is the dream which built the city of Tel Aviv on the shores of the ancient port of Jaffa, a jumble of skyscrapers lying on the sand of the Mediterranean Sea in front of a lively promenade of beachers, yogis, cyclists and trendy and cosmopolitan venues. 1. Com’è iniziata la tua esperienza nel settore del caffè?Dal 1995 mi occupo di fornire servizi di consulenza strategica alle catene di caffetterie in Israele. Nel 2002, mentre lavoravo per Café Hillel a Gerusalemme, l’azienda lanciò un progetto di franchising, con l’obiettivo di proporre presso le filiali una miscela esclusiva per il caffè infuso. Ristretto Import & Marketing Ltd. è stata creata proprio con l’obiettivo iniziale di importare dall’Italia una miscela di caffè unica per la catena Café Hillel.2. Perché la scelta della partnership con Diemme?Abbiamo incontrato numerose torrefazioni: il nostro scopo era trovare un fornitore che offrisse non solo una qualità senza compromessi, ma anche solidità economica e adeguate risorse umane (proprietari e manager). Ha assaggiato il nostro caffè e ha chiesto di diventare il primo a offrire un prodotto di qualità superiore.4. La vostra divisione caffè com’è strutturata? La divisione caffè della nostra azienda è affiliata al reparto gelateria e pasticceria e al reparto alimentare. Il responsabile di divisione dirige i responsabili clienti, in grado di fornire un supporto professionale a 360°, e l’ufficio tecnico per la manutenzione delle attrezzature. Tutti questi professionisti parlano il linguaggio del caffè, s’intendono di qualità, eccellenza e teoria del caffè, mentre si cerca di trattare la questione dei “prezzi” come marginale, per quanto possibile.5. Come immagini il mondo del caffè in Israele nei prossimi 5 anni? Nel giro di pochi anni entreranno nel mercato i principali attori internazionali, che hanno una diversa prospettiva commerciale. Il segmento si concentrerà perciò attorno a tre aziende leader, e il focus si sposterà sul prezzo. Al contrario ci sarà un piccolo numero di attori - aziende locali di torrefazione o importatori - che si concentreranno sulla qualità del prodotto finale. Prevedendo questa tendenza, abbiamo deciso di diventare protagonisti in entrambe queste arene, posizionando Diemme come

marchio premium nel mercato locale e, allo stesso tempo, unendo le forze con una delle suddette principali aziende di caffè per offrire una soluzione dedicata.

How did your experience in the coffee industry begin?Since 1995, I have been providing strategic consultancy services to coffee chains in Israel.In 2002, while I was working for Café Hillel in Jerusalem. The company launched a franchising project, with the aim of proposing an exclusive blend for infused coffee at their branches. Ristretto Import & Marketing Ltd. was created with the initial aim of importing from Italy a unique coffee blend for the Café Hillel chain.2. Why the choice of a partnership with Diemme?We met many coffee companies: our aim was to find a supplier that would offer not only uncompromising quality, but also financial soundness and adequate human resources (owners and managers). Finally, we selected Diemme as a potential long-term partner for the following reasons.- Human resources: professional management is flexible and open to new initiatives, fit for a complex long-term joint venture, from the export office personnel to the executive management.- Quality: the final product is of superior quality, has a competitive market value and can be integrated into the selected business activities.- Tradition: the brand is managed by the third generation of coffee experts and is based on a tradition of values that has lasted for more than 90 years.3. Who was your first customer?12 years ago a new customer was about to launch a major culinary project at Tel Aviv’s Dallal Centre. It included a restaurant, a coffee shop, a pastry shop and a garden for events. He tasted our coffee and asked to become the first to offer a new superior quality product.4. How is your coffee division structured? Our company's coffee division gathers the ice cream and pastry department as well as the food department. The division manager is in charge of the account managers, who provide professional support at 360°, and the technical department for equipment maintenance.All these professionals speak the language of coffee, they know about quality, excellence and the theory of coffee, while trying to deal with the "prices" issue marginally, as far as possible.5. What are the keys to the collaboration between Ristretto and Diemme that have brought the brand to its high reputation in the Israeli market?The Diemme brand is positioned as a premium brand in Israel in the On-Trade coffee market segment thanks to the following advantages:- selectivity: our coffee division has the authority to select customers and reject those who could negatively affect the high positioning of the brand.- Ristretto’s coffee division, a leading company boasting premium brands with access to most of the relevant customers in the Israeli market.- the sacred three: the absolutely superior quality of the coffee beans compared to competitors in the local market, the quality of the brewing equipment and the service, training and control.- Moderate market penetration, according to a long-term strategy.6. Do you have new projects in sight?In collaboration with Diemme, we are planning to set up a professional coffee training centre within the Ristretto House, which houses our offices, a college and a logistics centre.7. How do you imagine the coffee world in Israel in the next 5 years? Within a few years, the main international players, who have a different business perspective, will enter the market. The segment will therefore concentrate around three leading companies, and the focus will shift on price. On the contrary, there will be a small number of players - local coffee companies or importers - who will focus on the quality of the final product. In the light of this trend, we have decided to become protagonists in both these arenas, positioning Diemme as a premium brand in the local market and, at the same time, joining forces with one of the aforementioned major coffee companies to offer a dedicated solution. Fondamentale anche il ruolo sempre più im-portante assunto dalla formazione nel mondo del caffè professionale: la specializzazione di settore, che prima non esisteva, è oggi un fat-tore chiave di business.Quali analogie e differenze riscontri tra il mercato italiano ed estero?L’Italia si è rivelata più tradizionalista rispetto alla crescita evolutiva che ha investito il mer-cato internazionale. Seppur lentamente e con una certa ritrosia, an-che il nostro Paese inizia comunque a recepire il micro-segmento rappresentato dagli special-ty e bevande alternative; il professionista del bar comincia a chiederci informazioni a riguar-do e le nuove generazioni si fanno più curiose. Guardiamo oggi con curiosità al mercato afri-cano, che rappresenta una grande opportunità di branding in prospettiva.Tra le novità su cui stiamo investendo, e che presenteremo a Host 2019, “Fresh Delivery” è sicuramente un progetto ambizioso, legato al rafforzamento delle partnership con i clienti internazionali. What is Diemme’s response to this scenario in terms of experimentation and research, transparency, sustainability?Diemme has always maintained an open mind, considering market opportunities not only in the company’s interest but also, even more importantly, in terms of making a con-tribution to the global growth of the sector. In particular there is a need for professional specialization, which can be achieved via ap-propriate training, and for stimulating curio-sity in terms of the offering. All this has been translated into Diemme Academy, a centre for professional development and also on-going experimentation and research into new origins and blends in the Gli Speciali line.What is the role of Diemme Academy in supporting exports? The Academy represents an extremely va-

luable example in the field of training and company development. It’s the place where we broaden our concept of flexibility, working with our foreign partners on ad hoc projects in a highly professional setting using all the tools a specialist would expect. The Academy embodies the company’s em-phasis on transparency and credibility, provi-ding a further stimulus to build the future of the coffee world together with our partners. What are Diemme’s main foreign markets? What are the main projects currently under development? In Diemme exports have been constantly growing in two figures for at least 10 years. We are well positioned on the European mar-ket, in particular in countries like Germany, Romania, Czech Republic and Greece, where we are present with highly successful strate-gic partnerships. However, the markets that show the best growth are the Middle Eastern markets, for example Israel. We are now also focusing our interest on the African market, which represents a great branding opportuni-ty in perspective.In terms of investment in new developmen-ts, which we will be presenting at Host 2019, “Fresh Delivery” is an ambitious project, ai-med at strengthening partnerships with our international customers. It’s an online portal that connects Diemme to the professionals abroad, enabling us to send our specialty cof-fees all over the world straight after roasting: a system for circulating high level products at affordable market prices.

approvazione campione.Un’attenta valutazione e un’adeguata tostatura dei campioni di pre-imbarco e la successiva analisi degli stessi dal punto di vista organolettico rappresentano il primo passo per il successo di una miscela.Profili aromatici e gustativi percepibili grazie alla tecnica del cupping esprimono al massimo il potenziale del caffè che

stiamo valutando e rappresentano una delle esperienze sensoriali più affascinanti in assoluto.I profumi che scaturiscono dall’infusione del caffè macinato a contatto con l’acqua calda sono la massima espressione della natura del nostro caffè.Una buona selezione ci permette di tradurre in una tazza di espresso le sensazioni più sorprendenti, il giusto bilanciamento tra acido, dolce e amaro, nonché una piacevole sensazione tattile: tutti elementi in grado di generare

esperienze positive.Nel caffè filtro, al quale dedichiamo

una tostatura specifica e più chiara, possiamo addirittura esasperare l’aspetto aromatico, per far percepire profumi fruttati e fioriti, riportando il caffè il più vicino possibile alla sua reale natura. Che si tratti di caffè filtro o più comunemente di espresso, ciò che può scaturire da una tazza di caffè estratta a regola d’arte potrebbe rivelarsi di volta in volta sorprendente.

Caffè Diemme “Sotto il Salone”, tra storia, innovazione ed eccellenza Mercoledì 8 maggio, in occasione del Food Fe-stival “Il Salone dei Sapori”, Diemme ha ufficial-mente inaugurato un nuovo locale nel centro della “sua città”, Padova: un piccolo bijoux si-tuato all’interno del mercato coperto più antico d’Europa “Sotto il Salone”, al civico 47.Fin dall’apertura il locale – una ventina di metri quadri arredati in legno e marmo – ha ottenuto un ottimo riscontro di pubblico: si tratta di un punto vendita di caffè piccolo ma elegante, che punta su un’offerta ricercata e di qualità.«Diemme, ormai unica torrefazione padova-na gestita dalla medesima famiglia da quasi un secolo» spiega il presidente, Giannandrea Dubbini, «non poteva mancare nel luogo per eccellenza del commercio patavino. Abbiamo realizzato un piccolo store, nel quale il cliente può acquistare le miscele da preparare a casa con la moka, ma anche un bar take-away, nel quale l’espresso o il cappuccino sono distribuiti attraverso una sofisticata e innovativa macchi-na che assomiglia alla spina delle birre». Per il locale è stato infatti scelto Modbar La Marzocco, l’originale sistema modulare di ero-gazione (caffè/acqua/vapore) collocato sotto al bancone. Tale caratteristica è in grado di aprire lo spazio del locale e aumentare il sen-so di interazione e accoglienza tra il barista e il consumatore finale.«Il caffè può essere quindi degustato anche passeggiando, in linea con le tendenze del mo-mento e le richieste della clientela» prosegue il presidente Dubbini, «pur rimanendo l’espres-sione della nostra tradizione. Senza dimenti-care l’aspetto sentimentale, perché Padova l’abbiamo nel cuore puntiamo a intercettare tanto i padovani quanto i turisti. Lo store vuo-le rappresentare una bella vetrina anche per il commercio estero: l’export, che coinvolge oggi oltre 40 diversi Paesi, costituisce il 40% del giro

d’affari dell’azienda». Così Diemme, che negli anni si è distinta anche per la gestione diretta di pubblici esercizi, am-bisce a entrare tra le caratteristiche botteghe del Sotto il Salone. Per l’azienda il nuovo punto vendita contribuirà anche a creare aggregazio-ne, invitando a soffermarsi in un luogo tanto suggestivo e quindi a conoscere e assaporare più a fondo le bellezze patavine e le sue eccel-lenze di gusto.

We created a small shop in which our customers can buy blends to prepare their cof-fee at home with a moka pot. We also have a take-away counter, where we prepare espresso and cappuccino with a sophisticated and inno-vative machine that resembles a beer tap".The shop uses Modbar La Marzocco, an ori-ginal modular delivery system (coffee/water/steam) positioned under the counter to create more space in the shop and improve the fee-ling of interaction and reception between the barista and the consumer.

“Our coffee can be enjoyed while strolling on the street, in line with the latest trends and customer demands", continues presi-dent Dubbini, “while continuing to be the expression of our tradition. Then there’s the sentimental aspect, because we love Padua and we aim to serve both Paduans and tourists. We also want the store to be a showcase for foreign trade: we currently export to over 40 different countries, re-presenting 40% of sales". And so, Diemme, which has also distingui-shed itself in the direct management of coffee shops over the years, now aspires to join the typical shops of Sotto il Salone. For the company, this new point of sale will also help bringing people together, in-viting customers to linger in a lovely place to discover and savour Padua’s beauties and gourmet excellence.

L’origine di questa tecnica è però da ricondurre all’invenzione dei filtri di carta da parte della tedesca Melitta Bentz, che nel 1908 brevettò l’idea, dando inizio a una distribuzione commerciale e consentendo il perfezionamento della percolazione. Il caffè filtro si ottiene infatti facendo gocciolare l’acqua calda attraverso uno strato di caffè macinato, posto in un filtro di carta (secondo le disposizioni SCA la macinatura dev’essere media). Percolando per forza di gravità, l’acqua scioglie le sostanze idrosolubili contenute nella polvere del caffè e le trasferisce nella bevanda che si raccoglie in un contenitore sottostante. Come per

tutti i sistemi di estrazione che utilizzano filtri di carta, anche in questo caso è vivamente consigliato bagnare il filtro per eliminare gli aromi di carta prima di inserirvi il caffè. Se in origine si utilizzava un percolatore manuale, oggi l’intervento umano è ridotto al minimo: solitamente nei bar e caffetterie il caffè filtro viene infatti estratto mediante un apposito percolatore automatico professionale. Il barista può quindi “giocare” solo con il grado di macinatura e la ratio grammi/litro per una resa in tazza diversa. Per un uso domestico si può invece reperire una macchina per caffè filtro in un qualsiasi negozio di elettrodomestici.NOT JUST ESPRESSO: ALTERNATIVE BREWING - AMERICAN FILTER COFFEE Filter coffee known as "American-style coffee" is a simple machine preparation (not to be confused with Ameri-can coffee, an espresso with extra hot water). Today, it is one of the most common beverages in the world, in particular in the United States and northern Europe, representing a symbol of a foreign lifestyle. The origin of this technique goes back to the invention of paper filters by the German company Melita Bentz, which patented the idea in 1908, launching commercial distribution and improving percolation. The coffee is filtered by hot water dripping through a layer of ground coffee in a paper filter (SCA requires a me-dium grind). As it percolates under gravity, the water dissolves water-soluble substances contained in the coffee powder and transfers them into the beverage which is collected in a mug or coffee pot below. Like all brewing systems using paper filters, the filter should be wet to eliminate paper aromas before the coffee filters through it. While a manual percolator was originally used, today human intervention is reduced to a minimum: filter coffee is usually brewed by a professional automatic percolator in coffee shops. This means that the barista can only "play" with the grind and the ratio of grams/litre for a different yield in the cup.For domestic use, filter coffee machines are available in any household appliance store.
