The Falerio Doc producing area is located in a special zone at thesouthern end of the Marche region around Ascoli Piceno and it is thelargest doc area too. This fringe strip of land boasts cultivations ofautochthon and excellent vines, such as Trebbiano, Passerina andPecorino, whose particular features are exalted by winemakingtechniques which emphasize the quality of wines obtained through agentle press of grapes, a cold cleaning of the must at 6 °C, and atemperature control of fermenting process at 18-20 °C.

The Rosso Piceno is undoubtedly the most widespread red wine areain the Marche region. About 3.000 hectares of land are cultivated forthe production of Rosso Piceno wine (300,000 hectolitres yearly). Thearea goes from the Tronto valley to Senigallia including 4 differentprovinces (Ancona, Macerata, Fermo and Ascoli Piceno) and the oldnorthern “ager picenus”. This Doc dry red wine is made from a minimumof 30-50% Sangiovese with up to 50-70%, Montepulciano andup to 15% of black grapes.

SelectionThis wine is rather high in tannins which are detectable by a gentlesensation in the mouth without evoking any hint of bitter, toastedalmond flavour.Winemakers pay particular attention to the wholeness, ripening andpicking of their grapes. Fruits used for such a wine are harvested at theend of October. Montepulciano vines are difficult to cultivate as ripeningis quite slow, but the results can be amazing. Only the very best grapesare picked for this wine, with attentive selection of the bunches.After the picking, grapes are stored in small baskets (max 20 kg) so thatbunches are not damaged. In cellar after the racking, wine is stored inFrench oak barrels (225 liters in size). When malolactic fermentationoccurs, wine needs other 12 to 14 months barrel aging.Suggested serving temperature 18 °C.

The grapes used for this red wine come from the oldest Vineyard ofthe wine company, where the cellar is located, exactly the vineyardN°145. This particular wine obtained through a selection of the bestMontepulciano and Sangiovese grapes, which are the most suitable forthe production of this well bodied and flavoured wine. Winemakerspay particular attention to the wholeness, ripening and picking of theirgrapes. Bunches indeed are picked by hand and then stored in smallbaskets of max 20 kg. After the bunch selection on the sorting table,grapes are pressed. Fermentation occurs through a typical burgundyvinification, lasting 10-15 days. During this time wine is subjected to aprimary fermentation, a postfermenting process with the skins for 10-15days, several remontages and temperature control from 18-26 °C. Afterracking off, wine requires a 8-10 months aging in French Barriques(225 liters in size) and other 4-6- months in bottle for the refining.

SelectionIt is well-known that Falerio wine producing area is poor in “aromaticlength”; the vines in the remaining lands of the region are mainlyTuscan Trebbiano and other autochthonic ones such as Pecorino andPasserina. Rio Maggio would rather offer its customerstypical wines than conventional aromatic ones. Telusiano is a selectedand outstanding wine, for which the company pays a special attentionin the grape harvest (in baskets, max 20 kg), distant med on the skins after con-tact for 3 days and 6/8 months on the lies. This particular care in all phases of production is aimed atobtaining a typical and flavourful wine, rich of aromas from its typicalTerroire.

The Pecorino Doc producing area is located on a hill fringe stripextending from Macerata district to the Abruzzo region. This oldvineyard, which has nearly disappeared in the ‘70s, as it was a lean-productionvineyard, was retrieved by some winegrowers of theMarche region.The Pecorino vineyard produces full-bodied wines both with a highalcohol content and sourness. Grapes are picked by hand and storedin small baskets (max 20 kg). Controlled temperature fermentation(18-20 °C) in stainless steel tanks. Then the wine is left on the yeastsuntil March. The bottle refining for 60 days prior release.

Wine making process occurs through the typical burgundy techniqueafter a close selection of the best grapes.Vintners pay a particular attention to grape selection, wholeness ofgrape and triage. In order to preserve the wholeness of fruits from anydamage, picking is done by hand (just 2 or 3 bunches of grapes eachbase) and then stored in small crates.On 1 hectare of cultivated land, just 30 quintals of grapes are picked.In cellars typical burgundy wine-making occurs, lasting 12 days.During this lapse of time wine is subject to a primary fermentation, apost-fermenting process and to a slight increase in temperature for 48hours. After racking off, wine requires a 16/20 months aging in Frenchoak Barriques (225 liters in size).

Although the French Chardonnay vine is very suitable to every type ofsoil it may rapidly loose its aroma in our dry viticulturalareas when ripening occurs too fast. From a microbiological point ofview the importance of this particular vine in the Marche region isgiven by the short, timely vintage and attentive winemaking. The development of ampelologic areas in the 80’s involved theMarche region too. In Italy there has been a marked tendency tointroduce the cultivation of foreign vines, especially the white grapewhich ripens earlier. They are particularly widespread in France(Sauvignon Blanc and Chardonnay). Rio Maggio has followed thistrend, adopting the cultivation of this new vine and obtaining anexcellent Sauvignon with a distinctive character.“Finding in this area a Sauvignon with this expression of such an excellentorganoleptic quality, so characteristic and elegant, is a rare and surprisingfact” (Gambero Rosso, 2002)

Pinot Noir is a great vine, particularly suitable for sparkling winemakingprocess. Its production requires the most attentive care of the grapes, ofthe early maturation stage and during the harvest.All grapes are harvested manually, after a careful selection of the bestbunches and brought immediately to the winery in small baskets toprotect the grapes. Here is the secret of an excellent sparkling wine: inthe winery a classic rose vinification occurs, leaving the skins in contactwith the juice for 2 hours without oxygen.Fermentation lasts 12-13 days at 16-18 °C.Re-fermentation occurs in autoclave (Charmat or Martinotti method)with 90 days on the yeasts.
