Il pesce questo sconosciuto !!!!Pur essendo l’Italia un paese che si estende per buona parte su territori bagnati dal mare, la quantità di pesce consumata a fini alimentari è quanto mai limitata (circa un terzo di quanto consumato nella Groenlandia o in Giappone). Tra i paesi dell’Europa mediterranea gli abitanti dell’Italia meridionale ed insulare risultano i minori consumatori di pesce; in realtà il modello “dieta mediterranea” definito sulla base delle abitudini alimentari degli contadini calabresi alla fine degli anni ’50 del secolo scorso e giustamente considerato ottimale per il riconosciuto beneficio in termini di prevenzione del rischio cardiovascolare, non contempla, con la esclusione delle zone costiere, un elevato consumo di pesce e di altri prodotti ittici. Sia pure provocatoriamente, non pare potersi escludere che l’esaltazione di un non pienamente compreso modello salutistico “mediterraneo” abbia contribuito a penalizzare la diffusione di una corretta conoscenza sulle qualità dell’alimento pesce. In pratica per secoli l’Italia mediterranea non ha ben conosciuto il pesce, privilegiando (anche per motivi culturali, etici e religiosi) il consumo di carni di animali terrestri e di prodotti della terra. Se, come è giusto in termini salutistici e nutrizionali, dobbiamo consumare più pesce occorre partire da una approfondita conoscenza dell’alimento e quindi iniziare a fare cultura sul pesce, superando i limiti di una politica disorganica e settoriale che ha favorito l’improvvisazione culturale, trascurando di affrontare con serietà e sistematicità scientifica le reali qualità alimentari e nutrizionali del pesce e dei prodotti ittici in generale. Nelle tabelle dell’IRNAN (cioè dell’Istituto di ricerca deputato allo studio degli alimenti in Italia) le varietà di pesce tabellate in termini nutrizionali sono poco numerose e certamente ben al di sotto delle oltre mille varietà di pesce consumate ad uso alimentare in tutto il mondo; la scarsa cultura dell’alimento pesce, si è tradotta e si traduce tuttora in una richiesta fortemente selettiva di poche varietà di pesce, tralasciando il consumo di altri prodotti ittici parimenti edibili, con le inevitabili conseguenze di un pessimo sfruttamento delle risorse marine che ha condizionato “de factu” uno spopolamento delle specie più frequentemente consumate. Il pesce è innanzitutto un alimento sano; viene indicato nelle diete ipocaloriche perché, a causa della grande quantità di acqua contenuta nelle sue carni, l’apporto calorico per unità di peso edibile è significativamente inferiore rispetto ad altri alimenti; l’elevata idratazione delle sue carni ne favorisce la masticazione e la digeribilità rendendolo particolarmente adatto per bambini ed ammalati; peraltro il contenuto proteico relativamente elevato (rappresentando il 15-20% dell’apporto calorico dell’alimento) è caratterizzato da proteine ad alto valore biologico per la presenza di tutti gli amminoacidi essenziali; in pratica le proteine del pesce hanno lo stesso valore nutrizionale delle proteine della carne, costituendone valida alternativa; Diverso, e per certi versi più favorevole sul piano nutrizionale e salutistico, è il contenuto in grassi che peraltro risulta estremamente variabile tra le varie specie, oscillando dallo 0,3% del peso a crudo per i pesci cd magri (dentice, orate polpo, rombo etcc) sino al 23% delle anguille ed in particolare delle anguille di allevamento ove la percentuale di grasso può raggiungere il 30% del peso a crudo; al riguardo val la pena ricordare come i pesci di allevamento hanno comunque una significativa maggior rappresentatività di grasso rispetto alle stesse varietà pescate in mare aperto, tant’è che le

più aggiornate tabelle nutrizionali distinguono per una stessa varietà di pesce le diverse composizioni nutrizionali in relazione all’habitat di provenienza del prodotto. Tuttavia il grasso del pesce, ed in particolar modo del pesce pescato, si differenzia notevolmente dalla componente grassa presente nelle carni bovine, suine e di altri animali terrestri: in quasi tutte le varietà di pesce la quantità di colesterolo è del tutto trascurabile e la componente lipidica è in buona parte rappresentata da acidi grassi del gruppo omega 3 (ac linolenico, acido eicosapentanoico) che sono acidi grassi essenziali, cioè non sintetizzati dall’organismo umano, ed esercitano un significativo effetto antitrombogeno come suggeriscono studi epidemiologici condotti su popolazioni ad elevato consumo di pesce per la massima parte consumato a crudo (Eschimesi della Groenlandia: 400gr/die/pro capite). Elevati livelli di acidi grassi omega 3 sono contenuti nel salmone, nelle anguille, nel pesce spada e nel pesce azzurro in genere; tuttavia occorre considerare come gli ac grassi omega 3, essendo chimicamente caratterizzati da legami insaturi, sono termolabili e quindi possono subire una parziale denaturazione durante la esposizione ad alte temperature come avviene nel corso della cottura. Per le popolazioni nelle quali il pesce viene consumato prevalentemente cotto, è necessario pertanto che l’assunzione sia quantitativamente adeguata, in modo da contenere gli effetti negativi delle pratiche di cottura, e non occasionale: il consumo ottimale è stato quantizzato in almeno tre porzioni/settimana. D’altronde l’assunzione di acidi grassi essenziali con l’alimento pesce offre indubbi vantaggi rispetto all’uso di cd integratori dove gli acidi grassi sono spesso sovradosati ed esposti, nonostante l’aggiunta di antiossidanti, a fenomeni di perossidazione che ne vanificano gli effetti. Ma gli effetti benefici degli ac grassi omega-3 non si esauriscono nell’ambito cardiovascolare e anti-trombogeno; gli omega-3 sono necessari per lo sviluppo embriogenetico delle strutture nervose ed encefaliche e dell’apparato visivo, per cui il consumo di pesce va sostenuto nelle donne gravide; ed infine, per le indubbie qualità anti-aging, per tutti quanti vogliano mostrare una pelle sempre giovane. Ma ricordiamo che per sfruttare al massimo le qualità nutrizionali, il pesce deve essere consumato fresco. Le pratiche di conservazione come salatura, affumicamento, inscatolamento ed altro modificano sensibilmente le proprietà dietetico nutrizionali; basti pensare ad esempio al ruolo del sale o dell’olio aggiunto; a parte va considerata la tecnica di conservazione mediante surgelamento, l’unica in grado di mantenere inalterato il valore nutritivo sempreché sia mantenuta ed ottimizzata la catena del freddo. Ed allora consumiamo più pesce perché fa bene, perché è buono e, se sapientemente cucinato, è gustoso e saporito; auguriamoci che, conoscendo ancora meglio le sue proprietà nutritive, aumenteremo il consumo sino a poterci confrontare con altre popolazioni che grazie all’elevato consumo vengono proficuamente ripagate con una minore esposizione alle malattie cardiovascolari e tromboemboliche.

Unappreciated fish!!!!Although a large part of the territory of Italy is near the coast, the quantity of fish consumed for food is very limited indeed (about a third of the amount consumed in Greenland or Japan). The inhabitants of Southern Italy and the Islands are the lowest consumers of fish in the Mediterranean countries of Europe; in reality the “Mediterranean diet”, based on the eating habits of the country people of Calabria at the end of the 1950s, and rightly considered ideal because of its recognised benefits for the prevention of heart disease, does not involve a high consumption of fish, except in coastal areas.Even if only in a provocative way, the possibility can not be excluded that the exaltation of a “Mediterranean” healthy eating model that is not fully understood has contributed to undermining the spread of a correct understanding of the nutritional qualities of fish. In practice, for centuries Mediterranean Italy has not understood fish, preferring meat from land animals and other products of the earth (for cultural, ethical and religious reasons, among others). If we must consume more fish, as would be correct in terms of health and nutrition, we should start with a deeper understanding of the food, and then create a culture of fish, which crosses the boundaries of an incoherent and localised policy that has encouraged cultural improvisation and failed to address the real cooking and nutritional qualities of fish, and fish products in general, in a serious, systematic and scientific way. In the tables of IRNAN (the research institute that studies food in Italy) the varieties of fish listed in nutritional terms are not very numerous, and certainly well below the more than a thousand varieties of fish consumed for food worldwide; this poor culture of fish has lead to a very selective demand for a few varieties of fish, neglecting the consumption of equally edible fish products, with the inevitable consequence of a very bad use of marine resources that has lead to a “de factu” depopulation of the species most frequently consumed. Fish is above all a healthy food; it is recommended for low calorie diets because the calorie content per unit of weight is significantly lower than other foods, as a result of the large quantity of water contained in its meat; the high water content of fish aids chewing and digestibility, making it particularly suitable for children and the sick; what is more, the relatively high protein content (representing up to 15-20% of the calorie content of the food) is made up of protein with a high biological value due to the presence of all the essential amino acids; in practice the proteins in fish have the same nutritional value as the proteins in meat, and are therefore a valid alternative. The fat content is different, however, and more favourable for health and nutrition for various reasons. It varies a great deal between species, ranging from 0.3% of the raw weight of lean fish (dentex, gilthead bream, octopus, rhombus etc.) up to 23% of the raw weight of eels, and especially farmed eels whose fat percentage can reach 30%. On this subject it is worth remembering that farmed fish have a significantly higher level of fat compared with the same varieties fished in the open sea, so much so that the most updated nutritional tables make a distinction between the nutritional compositions of the same varieties of fish, depending on the habitat that they originate from.The fat in fish, particularly in farmed fish, is considerably different from the fat found in beef, pork and meat from other land animals: in almost all varieties of fish the amount of cholesterol is minimal and the

lipidic component is mostly made up of fatty acids of the omega 3 group (linolenic acid and eicosapentanoic acid), which are essential fatty acids, that is, not synthesized by the human organism, and they have a significant antithrombogenic effect according to epidemiological studies conducted on populations that consume large quantities of fish that is mostly eaten raw (the Eskimos of Greenland: 400g/die/pro capite). High levels of omega 3 fatty acids are contained in salmon, eels, sword fish and “blue” fish in general; however, it should be pointed out that omega 3 fatty acids are thermolabile because they have unsaturated bonds and can therefore undergo partial denaturation when exposed to high temperatures, as occurs during cooking. For populations in which fish is mainly eaten cooked, it is therefore necessary for adequate quantities to be consumed regularly, in order to counteract the negative effects of the practice of cooking: the ideal consumption has been quantified as at least three portions a week. On the other hand the intake of fatty acids by eating fish undoubtedly has advantages over supplements, in which the fatty acids are often overdosed and, in spite of the addition of antioxidants, are often exposed to the phenomena of peroxidation, which void their effects. But the beneficial effects of omega 3 fatty acids are not just antithrombogenic or connected to the prevention of heart disease; omega 3s are necessary for the embryogenetic development of the nervous system, encephalic structures and the visual apparatus, and for this reason eating fish is recommended for pregnant women; it undoubtedly has anti-aging properties for anyone who wants younger looking skin. But it should be remembered that in order to make the most of the nutritional properties of fish it should be eaten fresh. Methods of preserving like salting, smoking, canning and others have a considerable effect on dietary/nutritional properties; just think of the role of added salt or oil, for example; the preservation technique of freezing should be considered separately, as it is the only one able to maintain the nutritional value unaltered, as long as the continuity of the cold is maintained and optimised.So, we should consume more fish because it is good for us, because it tastes good and, if cooked in the right way, it is full of flavour; let us hope that with an even better understanding of its nutritional properties we will increase our consumption until we are able to compare ourselves with other populations that, thanks to a high consumption of fish, have lower levels of heart disease and thromboembolism.

Preparazione:
pulite i finocchetti e lessateli in acqua
salata; scolateli e tagliateli a pezzetti
mettendo da parte l’acqua di cottura.
Pulite le sarde togliendo la testa, la lisca
e la coda. Preparate un soffritto con olio,
cipolla e aggiungete l’acciuga facendo in
modo che si sciolga. Unitevi la passolina,
i pinoli e le sarde e fate cuocere per
qualche minuto. Aggiungete i finocchetti,
una noce di estratto di pomodoro, sale
e pepe e lasciate cuocere per circa
10 minuti. Lessate la pasta nell’acqua
di cottura dei finocchetti, scolatela al
dente e conditela con la salsa preparata.
Prima di servirla lasciatela insaporire per
qualche minuto.
INGREDIENTI PER 4 PERSONE
Preparation:
clean the fennel and boil it in salted
water; drain it and cut into small pieces,
and put the cooking water to one side.
Clean the sardines by removing the head,
backbone and tail. Cook the currants,
pine nuts and sardines together for a
few minutes. Add the fennel, a knob of
tomato extract, salt and pepper, and
leave cooking for about 10 minutes. Boil
the pasta in the water that the fennel
was cooked in, drain when “al dente” and
mix with the sauce.
280g of spaghetti, 500g of fresh sardines
(or 360g for example), 4 bunches of wild
mountain fennel (e.g. 300g), an anchovy,
an onion, a knob of tomato extract, 10g
of currants and pine nuts, 30 g of olive
oil, salt and pepper.

Preparazione:
tagliate il pesce spada a dadini, quindi
preparate un soffritto con l’olio, l’aglio,
i pomodori spellati e tagliati a pezzetti e
un po’ di menta. Aggiungete al soffritto il
pesce spada e lasciate cuocere per circa
30 minuti. Lessate le pennette e conditele
con la salsa preparata, la tuma tagliata
a dadini e abbondante menta.
INGREDIENTI PER 4 PERSONE
Preparation:

fish, 40g of tuma cheese, two ripe
tomatoes (about 200g), 20g of olive oil,
mint, garlic, salt and pepper.

Preparazione:
In una casseruola con 3 cucchiai di olio,
fate appassire la cipolla e l’aglio tritati
finemente per 2 minuti insieme alle olive.
Aggiungete quindi il tonno tagliato a
cubetti e fate rosolare per 5 minuti.
Sfumate con il vino, aggiungete i pomodori
spellati, privati dei semi e spezzettati e
lasciate cuocere la salsa per 10 minuti.
Lessate le reginelle in abbondante acqua
salata per alcuni minuti e scolatele al
dente. Condite con la salsa di tonno,
spolverizzate con il prezzemolo trito e
servite.
INGREDIENTI PER 4 PERSONE
Preparation:
Lightly fry the finely chopped onion and
garlic in a casserole dish with 3 spoonfuls
of oil for 2 minutes, together with the
olives. Then add the tuna, cut into cubes,
and brown for 5 minutes. Add the wine
and cook until it evaporates. Then add
the peeled, chopped tomatoes with the
seeds removed and leave the sauce to
cook for 10 minutes. Boil the reginelle
pasta in plenty of salted water for a
few minutes, and drain when al dente.
Dress with the tuna sauce, sprinkle with
chopped parsley and serve.
320g of Reginelle pasta, 200g of fresh
tuna, 300g of ripe tomatoes, three
spoonfuls of extra virgin olive oil, 1 small
onion, one clove of garlic, 30g of stoned
black olives, 80ml of dry white wine, a
bunch of parsley, salt.
REGINELLE AL SUGO DI TONNO E POMODORO
Reginelle gr. 320, tonno fresco gr. 200,
pomodori maturi gr. 300, tre cucchiai di
olio extravergine d’oliva, 1 cipolla piccola,
uno spicchio d’aglio, olive nere snociolate
gr. 30,vino bianco secco 0,8 dl, un ciuffo
di prezzemolo, sale.

Preparazione:
In una pentola, ponete su fuoco medio,
abbondante acqua poco salata e gettatevi
gli spaghetti quando raggiunge l’ebollizione.
Nel frattempo, tagliate a metà gli spicchi
d’aglio e metteteli a dorare in una padella
con il peperoncino in 5 cucchiai di olio
extravergine d’oliva. Levate la padella dal
fuoco, eliminate l’aglio e il peperoncino e
fate intiepidire l’olio, quindi aggiungete 80
gr. di bottarga grattugiata e scioglietela
nell’olio, che non deve essere troppo caldo
per non farla rapprendere. Scolate gli
spaghetti al dente, versateli nella padella
e fateli saltare a fuoco vivace per 2
minuti, prestando attenzione a non far
asciugare eccessivamente il condimento.
Servite cospargendo ogni piatto con il
prezzemolo tritato e la rimanente bottarga
grattugiata.
INGREDIENTI PER 4 PERSONE
Preparation:
Put plenty of slightly salted water in a
pan over a medium heat and throw in the
spaghetti when it reaches boiling point.
In the meantime, cut the cloves of garlic
in half and brown them in a pan, with
the chili pepper, in 5 spoonfuls of extra
virgin olive oil. Take the pan off the
heat, remove the garlic and chili pepper
and leave the oil to cool. Then add 80g of
grated row and melt it in the oil, which
should not be too hot to prevent it from
curdling. Drain the pasta when it is al
dente, transfer it to the pan and cook
over a high heat for 2 minutes, taking
care not to dry the sauce too much.
Sprinkle each plate with chopped parsley
and the remaining grated row and serve.
350g of spaghetti, 100g of dried tuna (or
mullet) row, two cloves of garlic, half a
chili pepper, five spoonfuls of extra virgin
olive oil, a bunch of parsley, salt.
SPAGHETTI CON LA BOTTARGA
Spaghetti gr. 350, bottarga essiccata
di tonno (o di muggine) gr. 100, due
spicchi d’aglio, mezzo peperoncino, cinque
cucchiai di olio extravergine d’oliva, un
ciuffo di prezzemolo, sale.

Preparazione: In una padella antiaderente,
fate sciogliere 4 filetti di acciuga con 1
cucchiaio di olio a fuoco lento, quindi
unite il pangrattato e lasciate tostare,
mescolando continuamente per 5 minuti.
Nel frattempo, fate rosolare gli spicchi
d’aglio tagliati a fettine con le restanti
acciughe e 4 cucchiai di olio, quindi
aggiungete l’uvetta, precedentemente
ammorbidita in acqua tiepida, e il
concentrato di pomodoro diluito con 2 dl
di acqua circa. Lasciate cuocere per 1
ora a fiamma dolce e regolate di sale e
pepe. Lessate gli spaghetti in abbondandte
acqua bollente salata, scolateli ancora al
dente, quindi trasferiteli in una pirofila
e condite con il sugo preparato. Servite
spolverizzando abbondantemente con
pangrattato tostato.

of oil. Then add the currants, previously
softened in warm water, and the tomato
puree diluted in about 200ml of water.
Cook for an hour over a low flame and
add salt and pepper to taste. Boil the
spaghetti in plenty of salted water, drain
it while it is still al dente and then
transfer it to an ovenproof dish and add
the sauce. Serve sprinkled with plenty of
toasted breadcrumbs.

Preparazione:
In una pentola, ponete su fuoco medio
abbondante acqua salata e gettatevi gli
spaghetti quando raggiunge l’ebollizione.
Mentre cuoce la pasta, in una capiente
padella fate rosolare gli spicchi d’aglio
sbucciati e quelli interi in 4 cucchiai di
olio extravergine d’oliva per 2 minuti,
eliminate l‘aglio.

Preparazione: Pulite con cura le seppioline,
sciacquandole a lungo sotto l’acqua
corrente; tenete da parte le vescichette
con il liquido nero e tagliate il resto a
listerelle. Lavate i pomodori, eliminate i
semi e tagliateli a cubetti. In un tegame
fate appassire nell’olio per 2 minuti la
cipolla e l’aglio tritato, aggiungete le
seppioline e quando sono ben rosolate,
dopo circa 4 minuti, sfumate con il vino
bianco. Aggiungete il pomodoro a dadini,
le vescichette e proseguite nella cottura
per 15 minuti aggiustando di sale e
pepe. Cuocete gli spaghetti in abbondante
acqua salata per alcuni minuti, scolateli
al dente e conditeli con il sugo al nero
di seppia.

Preparazione: Sbucciate e affettate
cipolla e sedano, poi soffriggeteli in una

per 3-4 minuti. Infarinate il baccalà e

Passate i pezzetti di baccalà nella farina
e poi friggeteli in abbondante olio d’oliva.
Nel frattempo fate rosolare la cipolla con
un po’ d’olio ed aggiungete i pomodori

sale e pepe. Quando i pezzetti di baccalà
saranno dorati disponeteli in un piatto
dove avrete messo un foglio di carta

Preparazione:
Disponete la fetta di tonno bene aperta
sul tavolo di cucina e riempitela con
il pangrattato condito con formaggio
grattugiato, tuma tagliata a pezzetti e
uovo sodo a fette. Avvolgete la fetta di
tonno a rollò e legatela con uno spago.
Rosolate il brociolone in un tegame con un
po’ d’olio, quando sarà dorato toglietelo
dal tegame e nell’olio rimasto aggiungete
la cipolla e la passata di pomodoro.
Rimettete il brociolone nel tegame e
lasciate cuocere a fuoco basso per circa
un’ora. Appena sarà cotto toglietelo dal
tegame e lasciatelo raffreddare, quindi
tagliatelo a fette e servite con la salsa
calda versata sopra.

Pulite i calamari eliminando anche la testa.
In una ciotola riunite il pangrattato, i
capperi, le olive snocciolate, il pecorino
grattugiato, i pomodori spellati, privati dei
semi e tagliati a pezzetti, una presa di
sale e una manciata di pepe. Amalgamate
il tutto fino ad ottenere un composto
omogeneo con il quale riempire i calamari,
che chiuderete con stecchini da cucina.
Sbucciate la cipolla, affettatela finemente
e ponetela a soffriggere in un tegame
con l’olio per 2 minuti; unite la polpa di
pomodoro e i piselli e lasciate restringere
il sugo. Trasferite ora nel sugo i calamari
farciti, insaporite con un pizzico di sale e
una manciata di pepe, versate un mestolo
d’acqua e continuate a cuocere coperto
per altri 20 minuti. Lasciate intiepidire i
calamari, privateli degli stecchini e servite
dopo avere spolverizzato con prezzemolo
tritato grossolanamente.

Preparazione:
Formate il ripieno dei calamari
amalgamando in una terrina il pangrattato,
i pinoli, il prezzemolo tritato, le acciughe
deliscate e tagliate a pezzetti, i capperi
dissalati e tritati, 0,5 dl di Malvasia, un
pizzico di sale e una manciata di pepe.
Pulite i calamari e svuotateli. Tritate i
tentacoli e poneteli in una padella con
lo spicchio d’aglio schiacciato lasciandoli
soffriggere a fuoco basso in 4 cucchiai
di olio extravergine d’oliva per 4 minuti.
Eliminate l’aglio, unite il contenuto della
terrina e lasciate cuocere per 15 minuti,
quindi togliete dal fuoco e mescolate per
amalgamare il tutto. Riempite i calamari
con il ripieno e chiudeteli fissando la
punta con stecchini da cucina in modo
che non fuoriesca. Disponeteli in una
pirofila, irrorate con 0,5 dl di Malvasia
e cuocete in forno a 180 gradi per circa
30 minuti. Lasciate raffreddare 5 minuti
e servite guarnendo con le foglie tritate
di prezzemolo.

NEONATA (BABY FISH) FRITTERS

Preparazione:
In una pentola, portate a ebollizione
1,5 litri di acqua salata e gettatevi il
lattume di tonno, facendolo scottare per
5 minuti. Scolate il lattume, spellatelo
e tagliatelo a fettine molto sottili, dello
spessore di poco meno di 1 cm. Passatelo
nella farina e friggetelo in olio bollente.
Scolare le fettine e adagiatele su carta
assorbente da cucina per eliminare l’unto
in eccesso. Disponetele su un piatto da
portata, spruzzate con il succo di un
limone e servite.
INGREDIENTI PER 4 PERSONE

Preparazione:
Eviscerate e lavate il nasello, deliscatelo.
Mettetelo a marinare per 2 ore in 2
cucchiai di olio extravergine d’oliva
emulsionato con il succo di limone, sale
e abbondante pepe. Trascorso il tempo
della marinatura, passate il pesce nel
pangrattato e adagiatelo in una teglia
unta con 2 cucchiai di olio extravergine
d’oliva, con il ventre rivolto verso l’alto.
Farcitelo con le acciughe dissalate,
diliscate e tritate e con un pò di olio
della marinata. Mettete la teglia in forno
caldo a 200 gradi e cuocete per circa
18-20 minuti.

Preparazione:
Togliete la pelle al pesce, infarinatelo
e friggetelo in olio bollente. Ponetelo a
scolare su carta assorbente da cucina
e salatelo. Sbucciate e tritate aglio e
cipolla, poneteli in un tegame largo e
fateli rosolare con i capperi, le olive,
l’uvetta precedentemente ammollata per
10 minuti in acqua tiepida e strizzata, i
pinoli, le foglie di alloro e 4 cucchiai di
olio per 5 minuti. Adagiate il pesce fritto
in un tegame di terracotta (o in una
teglia) e versatevi sopra il condimento
preparato. Versate 1 dl di acqua tiepida
e infornate in forno già caldo a 180
gradi per 20 minuti. Servite nel tegame,
profumando con basilico.

Preparazione:
Lavate con cura i pesciolini sotto acqua
corrente e adagiateli su un canovaccio
per farli asciugare. In una padella
antiaderente, fate scaldare abbondante
olio per friggere a 180 gradi. Passate i
pesciolini nella farina e friggeteli un poco
alla volta nell’olio bollente. Quando i
pesciolini saranno ben dorati e croccanti,
dopo circa mezzo minuto, scolateli con
la schiumarola e adagiateli su carta
assorbente da cucina per eliminare l’unto
in eccesso. Cospargeteli di sale e servite,
accompagnandoli con il limone tagliato a
spicchi, che dovrà essere spruzzato sui
pesciolini fritti al momento di gustarli
per meglio esaltare il loro sapore.

Preparazione:
Sbucciate e affettate finemente le cipolle
e rosolatele in 2 cucchiai d’olio per 4-5
minuti a fiamma bassa. Pelate e tagliate
a cubetti le patate, aggiungetele alle
cipolle e continuate a cuocere per 10
minuti con un mestolo d’acqua. Condite con
il rosmarino tritato e mezzo cucchiaino
di peperoncino in polvere e regolate di
sale e pepe. Fate cuocere ancora per 5
minuti, poi spegnete il fuoco. Pulite,
eviscerate e lavate i pesci, infarinateli
e fateli rosolare da entrambi i lati in
una padella antiaderente con 3 cucchiai
di olio extravergine d’oliva. In una teglia
unta con 1 cucchiaio d’olio adagiate le
spigole, poi aggiungete il Marsala, il
succo di limone, le patate con le cipolle
e infornate a 180 gradi per 20 minuti
circa. Ultimata la cottura, trasferite su
un piatto da portata e servite.

Bagnate le fette di tonno con un battuto
preparato con l’olio, sale e pepe e
disponetele in una teglia. Ricoprite le
fette di tonno con il pangrattato, la
cipolla a fette, pezzetti di pomodori

“SFINCIUNI” TUNA

Preparazione:
Fate delle incisioni sul pezzo di tonno,
inseritevi delle foglioline di menta e gli
spicchi d’aglio tagliati a fettine. Fate
rosolare il tonno così preparato in un
tegame con 2 cucchiai di olio extravergine
d’oliva. Quando avrà preso colore, dopo
5-6 minuti, sfumate con il vino. Togliete
dal fuoco e tenetelo da parte. In un
altro tegame, scaldate 2 cucchiai di olio
extravergine d’oliva e fatevi appassire
per 2 minuti la cipolla tritata finemente,
unite i pomodori spellati. Regolate di
sale e pepe e lasciate cuocere per 15
minuti. Versate la salassa nel tegame del
tonno, coprite il recipiente e fate cuocere
per altri 40 minuti a fuoco basso.Fate
raffreddare il tonno per 15 minuti, poi
tagliatelo a fette e servite con il sugo
di cottura.

Preparation:

Preparazione:
Disponete le fette di tonno su un piatto
largo. Irrolatele con 2 cucchiaini di
olio extravergine d’oliva per fetta,
cospargetele di sale, pepe e origano
sminuzzato. Lasciatele insaporite in questo
modo a temperatura ambiente per almeno
1 ora, voltandole 2 o 3 volte. Scaldate
la griglia su fuoco alto, abbassate la
fiamma e ponete a cuocere le fette di
tonno, rigirandole sui due lati, 5 minuti
per parte. Servitele subito condendole con
l’olio della marinatura.

Preparazione: Preparate un battuto
con l’aglio, la cipolla e la menta, che
lascerete dorare in quattro cucchiai di olio
extravergine d’oliva, quindi aggiungete il
tonno a tocchetti e lasciate soffriggere a
fuoco dolce per 5 minuti. Aggiungete le
olive nere snocciolate, i capperi, alzate
la fiamma, versate il vino e fate sfumare.
Incorporate adesso i pomodorini Pachino. A
parte, in una padella antiaderente dorate
bene la melanzana precedentemente lavata
e tagliata a cubetti in abbondante olio
bollente in cui collocherete alcune foglie
di menta e uno spicchio d’aglio. Appena
le melanzane sono pronte, unitele al
resto e amalgamate bene per tre minuti.
Spegnete, quindi aggiungete dei petali di
rosa. Salate e pepate secondo il gusto dei
commensali.
INGREDIENTI PER 4 PERSONE
Preparation: chop the garlic, onion and

Preparazione:
Lavate e asciugate con cura gli anelli di
totani, sgocciolandoli e tamponandoli poi
con carta assorbente da cucina. Passateli
a lungo nella farina, pressandoli e
rivoltandoli perché ne siano ben ricoperti.
Mettete sul fuoco abbondante olio per
friggere in una pentola profonda e
scaldatelo: sarà alla giusta temperatura
se, buttandovi una briciola di pane, questa
sfrigola e viene subito a galla. Friggete
il pesce per circa 3-4 minuti, rivoltandolo
di tanto in tanto.
Prelevate gli anelli con una schiumarola,
trasferiteli su carta assorbente perché
perdano l’unto in eccesso e salateli.
Servite guarnendo a piacere con capperi
freschi, un mazzetto di erbe aromatiche
sminuzzate e fettine d’aglio in camicia
fritte.

Preparazione: Pulite bene i totani,
svuotandoli e separando la testa dai
tentacoli; tagliate questi ultimi a
pezzetti. In un tegame, soffriggete gli
spicchi d’aglio con 2 cucchiai di olio per
1 minuto, unite i tentacoli dei totani
e fateli rosolare; aggiungete metà dei
pomodori spellati e fatti a pezzetti, un
pò di sale e una macinata di pepe. In
una ciotola, mescolate il pangrattato con
il caciocavallo, la metà dei capperi e il
prezzemolo. Aggiungete la salsa preparata,
tenendo da parte qualche “ciuffetto” di
tentacoli e amalgamate il tutto con cura.
Farcite le teste dei totani con il ripieno
e chiudetele con uno stecchino. Adagiate
i totani in un tegame e fateli soffriggere
con 2 cucchiai di olio rosolandoli da tutti
i lati per 5 minuti, nite i tentacoli tenuti
da parte, i restanti pomodori spellati e a
pezzetti, i rimanenti capperi, sale e pepe;
allungate il tutto con un pò di acqua e
lasciate cuocere per 20 minuti. Lasciate
raffreddare, tagliate a fette e servite
irrolando con la loro salsa.
INGREDIENTI PER 4 PERSONE
Preparation: Clean the totani thoroughly by

spoonfuls of oil browning them on all sides for
5 minutes (in total). Add the tentacles that
were put to one side, the remaining peeled
chopped tomatoes, the remaining capers, salt
and pepper; add a bit of water and cook for
20 minutes. Leave to cool, cut into slices and
serve sprinkled with their sauce.

Preparazione:
Adagiatele su un piatto, irrolandole con 4
cucchiai di olio extravergine d’oliva. Nel
frattempo, fate bollire per 5 minuti in 2
dl d’acqua 1 arancia sbucciata, privata
della parte bianca e tagliata a fettine.
Dopo aver filtrato il liquido ottenuto in
un altro pentolino, unite il sugo di carne
e il vino bianco. Fate bollire ancora
per 2-3minuti e lasciate raffreddare.
Aggiungete quindi il burro sciolto a
bagnomaria, il succo di limone e quello
di un’arancia ed emulsionate con cura in
modo da ottenere una salsa. Arrostire
sulla graticola le triglie, opportunamente
salate e pepate, circa 3-4 minuti per
lato. Quando saranno pronte, disponetele
su un piatto da portata e irrolatele con la
salsa preparata. Servitele ancora calde.

on a serving dish and sprinkle with the
sauce. Serve hot.
