LA PIETRA OLLARE: CARATTERISTICHE

La particolare struttura di questo materiale naturale permette una straordinaria ca-pacità di mantenere e conservare il calore. Pertanto, pur impiegando molto tempo a scaldarsi, una volta raggiunta la temperatura desiderata, si rivela eccezionale per quelle cotture lunghissime a fiamma moderata: dalle zuppe ai brasati, dagli stracot-ti alla polenta. Tra i vari materiali naturali ha la caratteristica di essere estremamente impermeabile, non necessita quindi di alcuna smaltatura o rivestimento a vantaggio dell’igiene e della salvaguardia dei sapori della tradizione.

N.B. Non porre mai la pentola in pietra ollare a contatto diretto con la fiamma, usare sempre una retina spandifiamma a fiamma molto bassa oppure una piastra in ghisa per la diffusione del calore.

SOAPSTONE: CHARACTERISTICS

The particular structure of this material has an extraordinary capacity to keep and retain heat.Consequently, although it takes a long time to heat up, once it has reached the re-quired temperature it is excellent for recipes with slow cooking times on a medium heat: from soups and braised meats to casseroles and polenta.Like other natural materials, one of its features is that it is extremely waterproof and, as a result, it does not require any enamelling or covering, making it more hygienic and ensuring traditional flavours.

N.B. Never place saucepans made of soapstone in direct contact with the flame but always use a mesh flame spreader on a very low flame or a cast iron plate to diffuse the heat.

LAVA STONE: CHARACTERISTICS

The stone produced by ancient lava flows, is absolutely pure like A category glass, and is completely lead-free. The stone does not give off any harmful substances and cooks the food with-out using fats and without altering the flavour of the ingredients. It does not emit any smoke. The griddle heats in about 10 minutes and continues to cook with the flame off for a period ranging from 25 to 35 minutes (accord-ing to the thickness).
